I don't eat breakfast during the week, but for breakfast/brunch on the weekends....typically whatever is greasiest to cure the hangover from the night before.
If I have to pick from your list, croissant sammich easily.

Depends on the day. Tough to beat a biscuit that comes from a hole in the wall that's got somebody who knows how to make biscuits on staff. There's a Shell gas station not far from me and a 70 year old lady posts up in the back and makes biscuits and fries sausage, bacon, country ham, bologna, hot links, steak, and chicken strips every morning, makes gravy too. Biscuits are as big as a grown man's hand and one of those and a Diet Dr. Pepper will put you right with God and the world.
I also love a breakfast taco with sausage, eggs, cheese, potato or migas and green tomatilla salsa.
Then some days I like a pancake breakfast or something fru fru and sweet. I guess if it was my last morning alive though, I'd want a salty, medium rare sirloin with a couple of fried runny eggs, fried potatoes with onion and green bell pepper fried/steamed and mashed down a little bit, wheat toast with butter and jelly, and a caraffe of fresh squeezed orange juice. Let me eat that breakfast and then give me a pot of black coffee and 1 Marlboro Lite and I can die happy.

The title should read "What is your favorite hand-held breakfast?"
IMO The breakfast burrito has the highest upside when done right. I've had some unbelievable breakfast burritos in San Antonio and Houston at those little taco joints. Homemade tortillas, salsa, chorizo, fresh chilies.. man... it's making my mouth water just thinking about it.
I think my least favorite would be the French Toast style sandwich. I'm just not a sweets in the morning type of person.

This sounds like a Golden Pantry. I hit the one in Watkinsville (outside of Athens) every time I stay with my sister-in-law. Shell station...no alcohol because they are across the street from a school.
They have an area behind the counter where they make the dough and a rack where it is proofed. Two rack oven. One morning, I asked the clerk, "How many biscuits do you sell every day"?
"It varies, one to two hundred when the high school is out for the summer, to five and six hundred when Oconee county schools open up and there is a Georgia game scheduled".

Also dig fancy ingredients on a good English muffin.

Exactly what I do. I was at Bourgeois MM last Friday when they opened at 7am strictly for some hot turkey cheese for my grits. You must be from Lafourche Parish. I know a lot of folks that do that.
That or a good crawfish and cheese omelet with a little salsa on top. And during crawfish season the omelet will have onions, garlic, potatoes and sausage from the boil added in. Fiya.

I love biscuit, sausage, egg and cheese sandwiches, but I also love a good cheesy scrambled egg, salsa, bacon or ham or sausage breakfast burrito/taco. Sweet stuff isn’t usually my style for breakfast.

Got a lot in common with you LA boys but in Texas the breakfast taco is the king. Had three just this morning from Laredo Taqueria in Houston. Thats a great morning.
