Made zucchini enchiladas with homemade enchilada sauce. Pretty damn good, although not sure worth the effort slicing the rolling the zucchini. Just testing various recipes out for when my garden starts producing.

Honey garlic chicken thighs, sliced thin over either Udon or Soba noodles (haven't decided) with some steamed broccoli mixed in. We also wanted to add water chestnuts but the grocery was out :(

Vodka waters.

Next HomeChef meal. A sort of crispy pork chop thing. Cheddar and cream cheese mashed cauliflower. The green beans weren’t part of it but I had some about to go bad.
