Pulled the turkey out of the oil and forgot to take a pic.

Fried turkey is amazing at first, but like most fried things it gets kind of "meh" if you don't eat it right away.

Cooked really well, came out perfect. About 65 minutes in the oil. It was windy as frick and snowing some so I had hell maintaining the temp. It bounced between 345 and 365 a lot.

I did a dry brine and then injected it, which apparently was the wrong answer because it was salty as all hell. The family feigned bliss, but I knew...

Ripped the shirt off of it.


Stuffed with dirty rice which was cooked with the roasted bones stock.


I didn’t carve the Paul Bunyan slices.

Didn't do turkey. My wife is visiting her Aunt who is I'll. We'll do turkey tomorrow when she gets back.

I did. This was my third smoked turkey and it's been a bit hit or miss on getting the skin crisp. 2 years ago had a good skin, last year was a bit rubbery that didn't stick to the meat when it was sliced. The bird I posted above had a good crisp skin.
