Pulled the turkey out of the oil and forgot to take a pic.
Fried turkey is amazing at first, but like most fried things it gets kind of "meh" if you don't eat it right away.

Probably the best turkey I’ve done. Dry brine and overnight air dry FTW

Ripped the shirt off of it.
Stuffed with dirty rice which was cooked with the roasted bones stock.

Didn't do turkey. My wife is visiting her Aunt who is I'll. We'll do turkey tomorrow when she gets back.

I did. This was my third smoked turkey and it's been a bit hit or miss on getting the skin crisp. 2 years ago had a good skin, last year was a bit rubbery that didn't stick to the meat when it was sliced. The bird I posted above had a good crisp skin.
