Watching Justin Wilson and Emeril.. Both of them just threw raw chicken in their gumbo and let it simmer...

Ok.

I always cooked my chicken first in onion, celery, salt water then added the chicken later, and used the water as a season broth.

So... Have I been doing it wrong for 40 years?

I tried the rotisserie chicken thing in my last gumbo and was pleasantly surprised. Very pleasantly surprised!

I typically use raw chicken as well. Turns out great. I like to keep it as simple as possible. One pot meal. Some people dirty up like 3 pots to make gumbo. Not necessary. IMHO.

i dont use raw yard bird anymore. Rotissori chickens, debone, make stock with leftovers. since chicken is cooked already, you add very late in your process.. you can debone and make stock the day before. comes our great. PS. dont get a weird flavored chicken. stick to garlic butter or creole type.

RC is the GOAT chicken for gumbo...especially the huge one at Sam's for $4.98.

Side note: Has to be just plain rotisserie chicken, not some lemon pepper or herb and garlic flavored yard bird.

Next time, buy an extra RC for the stock. Use the entire thing. Very impressed with the results.
