I don't know that I would even say "almost all". Cheese by its very definition is curd. It's just that some cheese products have other ingredients and/or production processes (e.g., aging).

I can't think of anything. I'm game to try pretty much anything, and most of the time it's at least palatable.

Two things I tried and quit after one bite were (1) stewed tripe and (2) chopped liver in a deli. I've eaten tripe in pho and found it okay, but this stewed version smelled like a wet dog. I like fried chicken livers, but the deli chopped liver was one taste and out for me.

Well in your defense you can get some bad hoghead cheese. The ones with way too much gelatin are gross

Anchovies. Smell funky, look funky, but they make a Caesar salad fantastic.

I agree, but was leaving room for those who believe non-dairy cheeses are actually cheese.

Next time you're making a simple pasta and oil dish, throw a couple of anchovy filets in the oil at the very beginning and cook them down (they'll basically dissolve). Adds an incredible depth to a simple dish.

Tete de veau.

It actually sounds pretty - as do most things in French - until you realize that it is the contents of a calf's head, including the wormy looking brains..


I had it at a bistro in Paris and it was delisious.

Growing up, we always had this with cottage cheese or shredded cheese, not mayo.
