Nah 
I just really don’t like single use plastics.
It doesn’t make a lick of sense to me that a plastic spoon that I used for 30 seconds as a kid to eat ice cream will be on the earth for 1000 years.

The atoms that make up the plastic and styrofoam have always been here. Put them in the trash and they'll be buried in a landfill which is where the molecules that make those products came from (the ground). As long as you don't throw them in the ocean/river, it's not hurting the environment.
Problem is third world countries with inadequate waste management build landfills in river beds and allow the trash to wash away eventually into the (Indian) ocean. Not using plastic straws in the US is doing nothing for the environment.

I did not mean to give the impression that it was scalable, only that there are possibilities. I think the restaurant would have to set up an on-premise collection sight that could handle the volume. This wouldn't be for every customer, only the 10-20% of customers like weagle99 who want to participate in more sustainable plastic waste practices.
If we're keeping consistent with the idea that this isn't for every customer, only the 10-20% of customers like weagle99 who want to participate in more sustainable plastic waste practices, then the additional volume of dishes wouldn't add too much additional labor. They could handle it,
On the other hand, sounds like a great business opportunity for a third-party to-go container collection and sanitation capital venture.

Maybe we're looking at the problem all wrong. It's not the to go containers we need to look at- it's the portion size.
Honestly- what percentage of your leftovers actually get consumed once they're shoved in the back of the fridge? It's probably 60/40 consumed/thrown out in my house.

Eat at Waffle House. They still wash dishes and have stainless forks/knives/spoons. Glasses and cups are also reused.
Maybe your problem is not going to the eco-friendly restaurants.
I remember when I was a kid eating at Krystal and they had washable dishes/cups and glasses.
They still serve hamburgers/fries in paper holders.

Styofoam is pretty useless, but a lot of restaurants have containers that we reuse for leftovers or to give out to guests when we cook too much.
I hate waste, if I can find another use for something, I will. In my woodworking shop screws go in old jars, etc.. My parents grew up in the depression, waste was a deadly sin.
If I'm in the car I always bring a thermos of cold water, if I have to stop to eat fast food I don't buy a drink or French fries, that only leaves a paper wrapper to deal with.

The Southern restaurant dilemma. If I serve what you should eat, you complain I rob you. If I serve you what you want to see in a portion, you eat it all and get the die-be-tuss.
