EZ chicken enchiladas -- kids loved it back in the day.

Pressure cook 3 or 4 boneless breasts(20 min)
-cut/ shred chicken and put in pan(onions/ peppers optional)
-add taco seasoning and some of the chick stock from the pressure cook
-add can of cream of chicken or cream mushroom soup
-add half cup of sour cream

Cook for 6min or so

Scoop chicken mixture and shredded cheese into tortilla then do a roll fold like a burrito. Place in 9x13 glass or pan(easily makes 6 with left over mixture which is good for nachos whenever)

Spread some mixture then cheese on top and bake for 20min.

Everyone in our house loves chicken thighs, they're still cheap. Easy to do in the oven. Season the skin how you like, mine like shake and bake, sometimes we go parmesan crust with Italian seasoning, I usually just do spices on skin and maybe shove some jalapeno slices under the skin. Convection roast setting gets them done in less than an hour and skin is nice and crispy.

Only problem is 2 of the kids are needing 2 each now. Eventually we might need a dozen per meal.

Look up sheet pan meals/dinners. There are a lot out there and they are quick and easy. You can change them up an switch out sides to those your kids enjoy.

When i see chicken breasts $1.99/lb, i buy a bunch.
Just bought a bunch of leg quarters from Rouses that were $1.29/lb
They'll do the same with pork loins for $1.99.lb or less.

Basically anytime i see any meat that's $1.99./lb or less, i buy a good bit of it and put it in the freezer.
Rouses had a whole top sirloin for $1.99/lb that i cut up myself and froze.
when they have pork butts for $.79/lb i'll get 4 of them.

You can make anything with a rotisserie chicken. Tonight, I made enchilada lasagna. Chicken, cream cheese, sour cream, taco seasoning, green chiles all mixed in a bowl, then alternate filling and tortillas. Top with enchilada sauce and cheese and bike until bubbly. Serve with sour cream, salsa, more enchilada sauce, etc. I like black olives on mine (i like them on a lot of things )

Picked up the chicken at lunch and just left it on the counter until after work when I threw it together in about an hour, including cook time.

Plenty of leftovers again.

Can't beat the rotisserie chicken from Costco. It's one of the "Best bang for the buck" buys there. Last time I got one it was $4.99 for a bird about 3.5 lbs. cooked to perfection.

Buy it, bring it home and do what you want with it. Can't buy a raw chicken for less that that at most markets.

100% this- I just told my wife that I'm done buying whole chickens to roast. I'll throw one on the smoker, but otherwise, I'll just stop at Sam's either at lunch or on my way home and get one if I need chicken for dinner.

That's how Sam's/Costco suck you in- when's the last time you saw someone that only bought a chicken at a big box store? There's always 1, 2 or 500 more things you 'need'

When my wife is gone, I usually default to the following:
- Chicken, broccoli, and rice
- Grilled bone-in chicken thigh and roasted potatoes
- "Mini" pizzas on Mission carb balance flour tortillas (or standard flour tortillas)
- Grab rotisserie chicken and make a wrap

None take a ton of effort or cleaning up.

I would NEVER go to Costco just to buy a rotisserie chicken, but have bought quite a few over the years when shopping for other things.

Have a list with 10 items and by the time I reach the checkout, I'm lucky if I have less than 20 items in the basket. I can't think of maybe 2 times I've gotten out of Costco for under $100 and most times it's close to $200 and up.

Sub the frozen meatballs with a pound of italian sausage, ground or in links. You can slice the links into small pieces that are the size of meatballs, or just do a loose meat spaghetti.

And to the salmon haters, we do air fryer salmon and sweet potatoes (microwave) quite often and the kids love it.

Another easy one: Chicken quarters, peas, rice and gravy

Cook some rice. Get some chicken quarters or skin on thighs, season them, brown them on both sides in a cast iron skilet, then add some chicken broth and cover. Let it cook on low for 10 min or until chicken is done (165 temp). Heat a can of peas (black eyed, purple hull, field, etc) in a separate pot and season it well. Done.

fair enough I didnt expect the downvotes at all.

We buy a whole Salmon filet, season it up and throw it in the oven.

Roast some broccoli in the oven at the same time.

Easy and quick to cook and clean up.

I have three kids ages 7 and under and theres never any left.

We’ve been Sam’s members forever, and this is one thing that hasn’t changed- Everything averages to $10. 10 items- $100. 25? $250. Only times it doesn’t work out that way is when we bought something on the higher side like diapers and/or formula or a whole tenderloin.

4 kids, all in sports.

We cook protein of choice and slap on top of rice with cheese, sour cream, salsa, and obligatory olives and roasted veggies.

Protein is usually bison meat/organ blend, beef, or chicken thighs.

Nobody gets sick of this dish.
