I'm going to argue the flip side of your point.
I think every city needs a certain number of places that at least try to keep a certain sort of old style continuity. Such places will naturally tend to get or seem "stale" and a lot of times they will also fall into the trap of cutting corners on things they do in order to keep going. Just as often, someone will notice that's happening and step in to rectify it.
At the same time, a lot of such places will fall into the (real or perceived) position of becoming a "tourist trap."
If I travel to new places or places I don't go often, I will about equally seek out the new and exciting places as I will something that is old, established and notable in the city.
I find I'm about equally happy and disappointed at both types.
I've never been to Peter Luger's but been to plenty of places like it. I'm sure like most of them, it has its flaws. I still think there's a good reason for such places to continue to exist and the tone of this piece sort of reads like it's saying there isn't.

I dont disagree with your theory.
Take for instance, New Orleans. You have some grand old dames in the quarter in Antoines, Galatoires, and Arnaud's. Of those, Galatoire's and Arnaud's are still delicious and serving a traditional Creole meal, while still managing to do small bits of innovation here and there. Arnaud's really got behind classic cocktails (or never abandoned them) and made the French 75 bar a world renowned spot. Galatoire's has continued to bring in talented chefs and at least allow them to run specials and do some fun things.
Antoine's...what have they done besides lower their standards and push out steam table facsimiles of dishes that they may have created but others have perfected?

Well it’s not clickbait. It’s the New York Times food critic.
And it has one Michelin star and prior to Wells review had two stars from the NYTimes which with its history Is probably about right.

Loved the review and have really enjoyed Wells' tenure as the critic. Its very contrasted to the poetic and gilded style of Sifton or the hagiography of Bruni for fine dining.

I can understand Lugers not wanting to stray away from the "we care about steak and steak only" mentality but IMO they have taken this too far. They have let quality suffer across the board while simultaneously raising prices. The place screams let's get in as many people as possible each day while not giving a shite about quality or experience. With all of this said, I have always really enjoyed the steak.
I actually like the Peter Luger's in Manhasset more than the one in Williamsburg.

I've never been to PL because I don't care to travel to Brooklyn. When I travel to NYC, I'm traveling to stay and enjoy Manhattan.

You're missing out. Not on Lugers, but Brooklyn has a lot of really cool spots. Especially if you like beer.

next time you're in manhattan, make sure to get a real new york slice at this little mom and pop place in times square called sbarro

I've been and there are some cool spots, but just too many great places across the East River closer to my hotel and the events on my schedule. If I lived there or spent longer periods of time in NYC, PL and other spots in Brooklyn could come into play.

Michelin not really the best barometer anymore. Loads of problems/conflicts in their model. But ok, it has a Michelin star. So did Daniel and per se (3 in fact), Wells skewered them also.

Bump.
So Gallagher’s over Peter Luger’s? Wife and daughter are going this weekend and wanted a good steak. They are planning on going to a Chinese place as well: Chinese Tuxedo? Never heard of it before.

I chose Wolfgang's Steakhouse when I went late last year. It was very good, but if I am being honest, it didn't taste any better than Fleming's --- which is not a bad thing but know that a steak can only taste so good, so to speak. The ambiance was cool and I liked the way they cut the steak "Luger" style.
I just ate at The Stockyards Steakhouse in Phoenix and it was just as good and slightly less expensive. My point is, if you want to eat at a steakhouse in New York, I really don't know if one is marginally better than another, especially when you are dealing with prime steakhouses. Find one that works for you in terms of where you will most likely be and one that has a reservation time that fits your schedule.

The review got mentioned in the season finale of Ray Donovan. I found the script online.
Minor Spoiler Alert
Jim Sullivan goes to see Ray:
You get the papers? Well done.
Well done, Ray.
Well frickin' done.
Ha ha.
We gotta we gotta go out.
We gotta go out, uh, celebrate.
Over to Luger's.
Ray: Sure.
Well you gonna you gonna give 'em to me or not? The papers.
You read that review in "The Times" about Luger's? I mean, Jesus Christ, how do you give the best steakhouse in the country zero stars? How they how they I mean, that elitist frick.
What does a, what does a guy like that know [LAUGHS.]
about steak, you know? I mean, maybe, uh, truffle-coated cockroach balls or some shite like that but, uh, not steak.
The only problem with, uh, the only problem with with Luger's is gettin' a reservation, you know? Ha.
I kn-I know but I know a guy.
A teamster.

i went to PL about 5-6 years ago and found nothing special about it.
I've been going to New York for 35 years. I've had dinner, lunch and breakfast countless times, in all five boroughs of New York City with investment bankers, doctors, lawyers, food network staff, fashion industry executives, Broadway publicists and producers, and more goomba's than I can recall and not one of them has ever said, "Let's go to Peter Luger's." Not one.

Nah. I searched the board for New York and this is what came up. Instead of starting another thread, I bumped this one with my question since it partially touched on what I wanted to know.
Thanks for the list. I'll pass that along to the wife.

Where are they staying? You can find a lot of good steaks in NYC. Of the two you mentioned, Id go to Luger's
The Infatuation has some good info on restaurants. Here is what they said about the Chinese Tuxedo LINK
