I bartend weddings about once a month.
Best thing I had was Lumpia (Pilipino Egg Rolls), The bride made them herself. I ended up contacting her after and buying 50 to put in my freezer.
Most interesting was strawberry sandwiches. Surprisingly they were actually pretty good.

My grandmother catered a many weddings. She would make Crab Mornay, she would double the Sherry Wine part.

I was served a salad that was romaine leaves tied in a bundle at one end using a thin slice of cucumber so that it was shaped like one of these:
Obviously didn't change the taste, but the presentation was interesting.

At one of my daughters we got a local restaurant to bring his mobile brick oven and he did individual pizzas (about 5-6 different kinds), humus and pita, and caprese salad. Slamming.

Daughter ( no pics) getting married in March. We are skipping traditional wedding cake getting multiple flavors of cakes from Nothing Bundt Cake and letting people choose.

I’ve seen people do something similar with the groom’s cake (ex: 4-5 choices of cheesecake). I have also seen the “groom’s cake” being specialty drink/shot station.

At a wedding for one of my nephews about 5 years ago they had the traditional stuff of large roasts with braised new potatoes, steamed vegetables, lots of finger food, pasta with cream sauce, hors d'oeuvres, etc.
They also had a full service sushi bar, vegetarian/vegan area and all you could eat fresh shucked oysters.

Bite sized BLT things with tomato jam and bacon pieces (real, chopped up bacon). Little, deftly made biscuit thing. Scrumptious. I think everyone there could've eaten twenty of them, but we were each given two.
