If microwaves kill bacteria, why can't you just use one to heat up expired food?

Don't get me wrong. I would NEVER do this. I have a phobia of expired foods and through anything away that is remotely questionable. Just was wondering that.

I don't think a bunch of dead bacteria would taste too good.

You need to stop asking these questions. “They” are listening.

It isn't just bacteria.

The bacteria release toxins that aren't killed by the microwave.

A microwave would kill most of the bacteria but not all. You would have to sterilize it in an autoclave or an incinerator. No longer edible after that.

If the bacteria in question is clostridium it will have already released its toxins. The microwave will not destroy this, and you would get botulism and possibly die.

Go ahead and say it...you're thinking about eating out of trash aren't you?

Yep, endotoxins that get released when the bacteria die. Won a case with this as the core rationale decades ago.

Oh lord.

Most expiration dates are for QUALITY purposes not safety concerns.

You can eat food products past their expiration dates as long as they are not spoiled. There are signs when things begin to turn and I much prefer using my senses to determine if something is good or not over using a date.

Now an interesting fact about microwaves, they are very good at killing bacteria and are even used in the past in less developed areas to sterilize instruments. They would insulate the metal instruments to prevent damage from the microwave and also used them on acrylic tools.

Ovens and stoves kill bacteria as well. The heat is what kills the bacteria, not the “nuking” of the food.
I think 185 degC kills all bacteria, that’s why that’s the temperature you cook chicken to.

Microwaves can kill bacteria. They can’t make expired food, unexpired. Ya dumbass.

Research these terms:

Spoilage bacteria
Pathogenic bacteria
Foodborne infection
Foodborne intoxication
Foodborne toxin-mediated infection

That should answer your current and future questions.

This board has a resident food safety man, he can explain it better than I could.

some bacteria produce toxins when they are alive. Others release toxins when they die

You can but they take the nutrition out of the food.

You going for total dehydration? I think you mean F and 165 internal temp.

I did food safety for a decade. That date IS a quality date. They really can't put a date on safety, if it looks bad, throw it out.

Remind me to never eat at your house if you cook your chicken to 365 degrees F

I love dried chicken bits.

But seriously, I work with the metric system all day long, it’s stuck in my head.
