Do any of you like this? Please explain why.

For me, drinking teaspoons of grease does nothing for me. Niether does the burnt pepperoni edge either.

And pepperoni is my essential topping for pizza.

I like it. I actually like a little grease on my pizza.

grease + burnt edges = flavor

You could put the cheese on top of the pepperoni and enjoy your pizza without burned edges and knowing how much grease you are consuming.

I don't know about the science here, I assume well cooked pepperoni cups like that?

Because I like it cooked well, I'm just not a fan of the pooled grease.

That is what happens when your pizza place uses cheap pepperoni

I am not sure if this is the case. Prince Street pizza in NYC is most known for the pepperoni that cups, and they use a nice pepperoni.

I was always a pepperoni pizza guy but rarely order it anymore. Give me cheese or sausage among the popular toppings over pepperoni.

"The meat, if stuffed using a smaller than desired stuffing horn for the casing, (casings that are in sticks generally the horn is about 1/3 of the diameter of the casing) and it is held about 1 inch back from the end of the horn. This causes the meat to flow into the casing in a U shape, so when you slice the meat, that is the pattern that is reinforced as it cooks and shrinks, causing the cup to form. When I worked for another major Pepperoni producer, our cup proof pepperoni was hand stuffed using casings that were as close to the diameter of the stuffing horn a possible creating a straight line flow and no discernible flow pattern, and the product never cupped. Other companies have cuts and holes drilled into the end of the horn to change the dynamics."

That’s nostalgia for me. Grew up eating the cheap Tony’s pizza and their pepperonis always did that.

...and for the record, that "Spicy Spring" at Prince Street is awesome.

Edit - Nevermind. Doesn’t seem like I’m remembering correctly.

I did find this though -

I don't mind it. If I'm eating pizza, worrying about the unhealthy aspects of it is the last thing on my mind. I prefer supreme with a little cheese as the final topping though.

I could maybe understand the not consuming the grease part, but then you declared war on the burnt ends also.

Take a lap good sir. See you next week

High heat makes them cup like that. My Ooni over runs at 900 degrees and they always cup. Pizzza made in my conventional oven around 500 degrees do not cup.
