Love it, especially if it’s the small, spicy pepperonis. It’s the only reason to go to Marco’s Pizza.

I remember a frozen pizza that had these back in the 90’s. I cannot find it now at all. If anyone else can chime in please let me know.

Pepperoni cups are intentionally created by the casing / stuffing method, slice thickness, direction of the heat source, and temperature differential of the cook. There are benefits to having this happen - mainly the grease from the pepperoni not pooling onto the rest of the pizza and creating a better texture of the surrounding cheese.

In short, if you want pepperoni that curls, get natural casing pepperoni, sliced medium thickness (3-5mm), and cook in an oven where the heat source cooks the top of the pizza as well (or more) than the bottom.


ETA: In a sad side note from reading the below article: some pepperoni makers intentionally make pepperoni's that won't curl to prevent from being sued by someone eating a 450F pocket of oil and scalding themselves.

Yes, to think if you don't see grease means you're not eating it is funny. It's either pooled a little in the cupped pepperoni and pooling all over the surrounding area.

I was referring to the grease, not the cupping. Cupping comes from the manufacturing process. Heavy amounts of grease come from crap pepperoni

I did that once. It was my own fault. I certainly wouldn’t sue anyone over it. And it was on a Tony’s frozen pizza.

It’s a good story. It was back when I was in college and my best friend from high school came to visit. We split a quarter ounce of some really good psilocybin mushrooms. I baked the pizza then topped it with the mushrooms when it came out of the oven. My first bite was of a slice with one of those cupped buckets of hot grease right at the tip and it splashed right on the roof of my mouth. Burned like hell. Probably should’ve let the pizza sit for a little bit but we were eager to get going.

Then we had a great trip. But I got to deal with shards of burnt flesh dripping from the roof of my mouth during the evening and that was pretty weird. But again, it was my own fault.

I love pepperoni on my pizza and I love all kinds. The phrase “This pepperoni sucks” has never passed my lips. And I’ve been to some bars where they have a pizza joint next door and a good greasy pepperoni pizza goes well with a few beers. (One bar I know even has a little window to the pizza joint where they can pass the pie directly to them.) I celebrate pepperoni in all its forms.

I hate when the cheese covers my toppings. I like the bits of caramelization on the topping.

Try a Tower of Pizza pepperoni.

Might change your mind.

I love crispiness also, but puddles of grease sucks.


All other toppings are on top of the cheese including sausage.

There is a method to their madness

Also the flavor of the pepperoni leaches into the tomato sauce (that is outstanding) and the crust that is also outstanding.

Instead of sitting on top of the cheese in puddles of grease.

I bet there's some science to it too. The top side dries out while the bottom stays moist from the sauce so it doesn't. When things dry they shrink, so in this case it pulls up and in and makes the cup.
