Tapas.....in Spain it's cheap bar food that has an amazing flavor. In the US it's always an uppity restaurant where each tapas is $10-15 and mostly mediocre

Since it’s also Third World, I’ll go with Mosco variety Pueblo green chiles.

Why can’t we raise chickens like they do in Bresse, France? Bresse chickens are the best.

What feed is used to raise them?

Also French goose liver foie gras.

Also plain chicken. Why can’t we raise chickens like they do in Bresse, France? Bresse chickens are the best.

Hudson Valley Duck Farm has duck foie gras that is as good as any goose from France.

Find someone that sells Red Ranger or Freedom Ranger chickens. These are the closest you will get to the Bresse chickens and they are very good. You will find them just like you do in France. At farmers markets and specialty markets. Bresse chickens have a designated origin status like Parmesan or prosciutto. They are good.

Cheese well you can find good cheese in the states and it is getting better since market demands are calling for more raw milk and unpasteurized availability. Those doors are being knocked down so I think cheese is really on the cusp of a revolution in the states.

Drinking cold white wine while eating a plate of anchovies in olive oil while sitting at a bar table on a side street in Seville is one of my favorite little travel memories.

Dirt cheap street stands selling shrimp cocktail in Colombia. Nothing like paying $3 for a cup of shrimp with spicy mayo. Was so good.

Spanish shrimp in garlic sauce was good too.
I Just love shrimp

Good quality bread. You can get it in most, if not all, restaurants in Italy or Spain. And they are not up charging you for it.
