These people actually think cows are causing climate issues....they have no clue how many bison used to roam the plains before they were killed off.

not a good comparison
bison existed within the overall biosphere
the issue with cattle ranching is the separation of livestock from agriculture. The biomass of the topsoil layer is degraded both by agriculture without livestock and by livestock without agriculture. And it is that topsoil biomass that preserves the O2/CO2 balance upon which all aerobic life on the planet depends. It affects everything from weather to ocean currents to biological diversity
I don’t care whether you eat beef or not (I certainly do) but there is a better way and it is the way that nature intended...livestock and agriculture together

I'm dedicated to completely ignoring any recommendations like this until the same people start calling for pet quotas. Dogs in particular are WAY worse for the environment than beef cattle. I'll bet every one of these soy boy communists has a fricking mutt.

Almonds take as much water as cows for the most part.
I rarely used Epicurious so not a big deal to me. Use All Recipes with Chef John and ChefSteps.
My kid cooks almost every meal from Pinterest.

In the US, at least, we have more than double the number of heads of cattle than we did at the peak population of bison.
There's little doubt that 90-100 million head of cattle have an ecological impact in the US, especially when you add in the rest of the world. That said, I don't think shaming people for eating beef, or hiding beef recipes, is exactly going to force much of a change.
One thing we could do is limit beef exports. We'd still get to eat our beef but the number of cattle would decrease (this would obviously piss off farmers and trade partners). What about using technology to lessen the methane output of cow flatulence and manure...some slight change in feed or some sort of microbial shot we give them that reduces methane emissions?
I don't know....I'm with Salmon, the grandstanding and virtue-signaling piss me off to no end. This move by Epicurious is akin to someone bitching about something on Twitter and thinking they're making a difference.
