I could see the au jus, but I'd skip the ranch. Just make sure you add the juice from the peppers too. It's really good.
I make a horseradish mayo to go on them.
We do them on ciabata rolls alot.

Last Monday, I cooked a Greek seasoned tri-tip, fajita seasoned chicken and 2 lemon dill pork tenderloins. The chicken ended up in a casserole with onion/bell pepper, rice and enchilada sauce and topped with cheese. The pork will go with steamed broccoli tonight, and the tri tip was eaten throughout last week.
Crock pot roast and chicken, shredded for meals for the week.
Roasted cabbage steaks are easy and very filling, especially with the above shredded meat or taco meat.

In my Mississippi pot roast, I skip the au jus-too salty. Ranch gives it a good flavor.

This sounds like Mississippi Roast instead of Italian Beef.
ETA: And you really need Marconi Hot Giardiniera as a condiment for the sandwich……

Chicken or pork chops in a sous vide with pretty much any seasoning you want, put it in there at lunch, sear it when you get home and make a quick side for it. Very good and very easy.
I freeze a bunch of meals at a time every week or two and makes for easy dinners since I work 10s.

One of our quick and easy meals is pork chop and either rice or noodles.
We buy pork chops when they are on sale. I cut them into serving size pieces.... some a little larger for 2 people and freeze them in sandwich baggies.
To "cook" the meal, I zap a pork chop in the micro to thaw it. I also cook either some rice or noodles. Or we sometimes have left overs in the fridge.
I then cook the pork chop in a skillet on high heat with extra butter. I season with Tony's, garlic powder and salt. When the pork chop is almost done, I add the rice or noodles and a little water. Stir often. The butter will start to turn the rice/noodles a little brown. Turn off the burner and stir a little more before serving.
Note: Adding left over veggies is good also.
This same type meal can be done with chicken or any other meat.

Lots of cooked foods freeze well.
Anything that has a gravy or water base will stay good in a freezer. With the exception of potatoes. IMO, potatoes only stay good for a month or two in the freezer.
So, when you have the time, cook up a big pot of some kind of stew like dish and freeze it in meal size containers. A soup, gumbo or jambalaya [with out the rice] are also good to freeze.
We cook large pots of spaghetti sauce and freeze for quick meals later.
Another quick meal.... make up a double or triple size batch of sloppy Joe mix. Freeze in meal size zip lock bags. Heat it up in micro while getting the bread ready.
The same can be done with ground meat and Taco mix. I usually keep some cheese in the fridge for making Tacos.

I do A 4 ingredient tomato sauce pasta from Marcella Hazan’s classic cool. Book
Crush a can of San marzano tomato’s in a pot with 1 onion cut in half, 5 tablespoons of butter and salt. Reduce down. Remove the onion and add pasta.
It’s amazing super easy.

Baked Barbecue Meatballs
Take a bunch of frozen Italian style meatballs ( I use ones from Costco) and place in a casserole dish. Squirt a sweet barbecue sauce like Sweet Baby Ray’s all over top, cover, and bake at 350 for 30 - 45 min. Serve with parsleyed potatoes, and sweet peas or steamed broccoli. Alternatively, make your own meatballs and do the same.
Smoked Sausage & Potatoes Skillet.
Slice and brown smoked sausage in a big skillet. Remove and reserve sausage. Sauté diced onions, bell pepper, celery, and garlic in the sausage fat. To the skillet of sautéed veg, add large diced/chunked potatoes that have been parboiled until almost tender. Add the sausage back to the skillet, along with a little chicken stock, let it simmer till potatoes are at desired tenderness, with some browned edges.
Sausage or Meatloaf Sauce Piquant
My husband’s choice for using leftover meatloaf is to chunk it up and throw it in a pot with a jar of Benoit’s Sauce Piquant and let it simmer for awhile. He serves it over rice. He’ll do the same with leftover (or freshly cooked) smoked sausage.
When I make rice dressing or eggplant dressing, I will freeze portions of the cooked dressing mixture (sans rice) in 8 oz containers. When my husband and I are eating different dinners (which happens often because he doesn’t eat low carb), he’ll pull out a dressing mix from the freezer, cook some rice, and have that as a side or entree for his meal.

We have been doing baked potatoes using leftover pulled pork, brisket or chuck, depending on what I have smoked lately. Big hit with the whole family and super easy.
