Hush Puppies


Hush Puppy Mix - To make about 10

• 1 cup corn meal.
• ½ cup flour.
• 1 large egg beaten
• 1 dash of salt.
• ½ teaspoon black pepper.
• 3-4 teaspoons sugar.
• ¼ teaspoon of baking Powder.
• ¼ cup grated or finely chopped onions.
• ¼ cup of finely chopped parsley. (optional)
• ½ finely cut up Jalapenos pepper


Mix all items in small bowl.

• Slowly add milk and mix. The mixture should be very, very thick.
• Set aside to cook later.
• Note: This mixture will absorb moisture while outside and should be put in a sealed container.


Cooking

• The grease should be about 325 deg. and deep enough to cover the hush puppies while they cook. A little cooler than temperature used to cook the fish.
• Take out about 2 tablespoon of the mixture and form into a round ball about ¾ to 1” in size. If mixture is too sticky, add more cornmeal/flour.
• Carefully set “ball” into grease. DO NOT drop it in the grease.
• Turn Hush puppies over while cooking.
• Cook for about 3 to 5 minutes until golden brown.
• Take out and place on paper towel.


Spread a little butter on the hush puppies while hot and enjoy!

I put out 2 feeders a few days ago. Two hours later I saw a hummer outside the kitchen window feeder. Today, my wife saw 2 around the backyard feeder.

This is in Lake Charles area.

One of the ways to change the hydrangeas flowers from pink to blue is to treat the soil with Iron shavings or rusty nails.

I have 3 hydrangeas in pots. The flowers have been pink the last few years. I treated 2 of the plants with iron filings this past summer. Waiting to see if I get some blue flower on these plants. I take in these plants during the winter cold snaps and did not mark which plants I treated. So this spring will be a surprise which ones will have blue flower.

IMO.... if you are only changing the draw weight 3 to 5 lbs, this will only change the arrow point of impact a very small amount out to about 25 yards. Beyond that, you might need to make slight adjustment to your pins.

A 10+ lb change, will require you to sight in your bow. Also, you should probably check your arrow flight by checking the "paper tunning".

Here in Calcasieu parish, our first 2 Martins showed up on Feb. 14 and the next day we saw 3. By the 19 th we had 3 pairs.

On March 5 we had 9 Martins. The Martins came about a week or more early this year and usually don't get this many until the 2 or 3 rd week of March.

The Blue birds built a nest about Feb. 24, but waited about a week to start laying eggs. By March 5 we had 5 eggs.
Lets see if I am correct.

I camped up there many years ago. Back then, only trolling motors were allowed.

I fished for a while the first afternoon, but did not catch anything. I talked to a ranger and was told to troll right down the middle of the lake. There is an old creek bed there. The next day I fish the middle and caught several Sac-O-ley. Later in the day, I went out again knowing where to fish and caught about 8 more with most of them about 1.25 lbs.

Had a fish fry and had enough to give some to folks camping next to us.

Very relaxing and well kept park.
All I can say is that both teams were really focused on the game. I did not see any of the players turn around to look at the girls dancing right behind them.

The LSU team could have gotten some "inspiration" from the girls to spur on the team today.

But I don't think allowing just anyone to carry a gun is a good idea. I don't think a person should be allowed to carry a gun in public without some kind of training.

After using it a few times and struggling to adjust a very low flame to control the temperature, I came up with an idea. I got a bunch of small nails and put a nail in about half the burner holes. This blocked off about 1/2 the gas flow, and I could better control the grease temperature.

FYI --- this size burner does good for boiling small batches of shrimp or crabs. I have the larger size burner for boiling crawfish.

I watched the first 3 LSU games on SEC+, but this broadcast "freezes" up fairly often and I miss parts of the game.

Are other people having this problem or is this my equipment problem? I watched today on YT with no problems.
I often fix something similar using broiled trout or redfish.

When the fish is almost cooked, I cover the fish with hot étouffée and put it back in the oven for about 2 minutes.

Note: if you can still see any of the fish, you did not put enough etouffee on it.

Here is my Peach Cobbler

2 to 4 servings

A cobbler can be made with a variety of fruits mixed with dough and baked. I use black berry (actually dew berries), peach and apple because they are what I like. The amount of fruit and dough can be varied depending on if you like more fruit or more dough.

Dough

• Melt about ¼ cup of butter in a medium size bowl.
• Add about 1 cup Pioneer Buttermilk biscuit mix in the bowl, Slowly add milk and mix with a fork, until thick and creamy smooth.
• Add about 3 ot 5 tablespoons sugar and mix.

Fruit filling

Use about 1 to 1.5 cups, of one of these suggestions:

1. If using black berries, they should be well sweetened.
2. Fresh fruit can be used. If so, cut up the fruit into thin slices and sprinkle with 3 or more tablespoons of sugar. The sugar will bring out a little juice to flavor the cobbler.
3. 1 or 2 large cans of your favorite fruit “pie filling” in heavy syrup.
4. Or, one of my favorites, is fresh blueberries.


Cobbler Preparation

Select size of baking pan so that after fruit and dough are mixed it will be about 1½” thick. About 9x9 inches.

• Add about half of the Fruit filling to pan and spread evenly.
• Spoon in about half of the dough spreading it over the surface.
• Mix the dough and filling a little but keep the dough evenly spread out.
• Add remaining filling.
• Spoon in some of the remaining dough and mix a little.
• Spoon in the remaining dough on top and spread evenly.


Cooking

Preheat oven to 375 deg. F.........cook about 25 minutes...........until golden brown.

This can also be done using a Dutch Oven and cooking with coals from a campfire. Be careful not to use too many coals (too hot). It is better to take a little longer than to burn the cobbler.

Your other choice is to pay a plumber about $500.

As for the filters....
24x36 would be the same as installing two 24x18. You should be able to find a 24x18 filter at most places that sell A/C filter.

2 or 3 years ago, the price of A/C filters really went up. I "invested" in buying a case of filters from Amazon. My A/C unit uses a 24x24 filter which is sometimes hard to find.






About 30 years ago, I cooked 4 sacks of crawfish at a family gathering. My momma offered to get the seasoning, so I told her what to get.

When I got there, she had gotten the Louisiana crab boil liquid. I put in my usual amount of liquid but had to keep adding more to get the water flavor right. After boiling the first sack, I made a trip to the nearest Walmart to get a gallon of Zatarains.

It took twice as much [maybe a little more] of the Louisiana liquid to get the same seasonings taste. The Zatarins cost a lot more, but you use a smaller amount to cook the crawfish.
I buy vacuum sealer film about every 3 years and just about to make an order. I look on Amazon and buy what every rolls are the cheapest deal.

I have never had a problem with the film quality. I hope the manufactures have not lowered the quality since my last purchase.

IMO.... $6000 is a little high, $5000-5500 is what I think it should cost. But, it does depend on access to the yard. If it is difficult to access, this drives up the cost.

Just putting up the new fence should be about $4500 [$26/foot] then add the cost to haul off the old fence. Add about $500 if you need a gate.
The price can vary some depending on your location. There may be a "Handman" in your area that can do this work a little cheaper. Get recommendations.
