Kartchners smoked is top dog. But I can’t eat it anymore indigestion . My new fave is Bourques regular.

I've always stopped at Billy's when going thru Krotz Springs. I didn't know there was a Kartchners there.
Well I'll have to stop there next time.
I like Billys. When living in BR/Zachary, Jerry Lees was the go to. Now living in DFW I have to get what I can order or whenever I'm passing through.
I like Best Stop and have gotten it shipped to me a few times, but I had some in the freezer and this weekend pulled it out and I wasn't impressed. Maybe it was in the freezer for too long but it was not good texture and lots of fat chunks in it.
So Currently it is Billys smoked and boudin balls with pepper jack cheese are my go to. I will be ordering some Kartchners though. Good to know.

Kartchner's, like Billy's and Bourque's, is originally from that Krotz Springs - Port Barre area.
Scott may call themselves the Boudin Capital of the World, but when you consider those three places above, along with Mel's, and where Johnson's originated from, St. Landry Parish might be the OG.

There's also the Mowata Store, Cootie's (which is a new owner since the previous passed away) in Eunice and as previously mentioned, the Superette.. Way back in the day, there was the E-Z Shop owned by Nolan Fontenot that had excellent links and Boo Ledoux' meat market. Just off the top of my head.
I think the combination of the French cooks and German rice farmers and sausage makers, make for a prime culinary hub.

Bourque’s in Port Barre. Consistently excellent. Their fresh and smoked sausages are great as well.

Man, I'm missing out on Bourques too in Krotz Springs. All this time I thought Billy's was the only one in town.

It's in Port Barre little down 190, turn right at the red light in you coming from Krotz Springs by the Love's Truck Stop and its down a ways on the left. Its a grocery store.

Bourque's is in Port Barre on Saizan.. about 15 miles west of Krotz Springs. Try their Jalapeno Cheese bread, too..

I would like to remind my friends on here that the speed limit in Krotz Springs is 45mph. Not 46 or more.

The cop in Port Barre parks at McCormick Hall and Event Center on 190.. Google Maps shows exactly where he's parked.

Yes, and they are good, but it’s technically in Acadia Parish.
Acadia Parish is an odd region for boudin. You’d think it would be good, and it’s certainly not bad at the various places, but the boudin tends to be a larger rice to meat ratio than places in St Landry, Evangeline, Lafayette and Iberia Parish. Then certainly once you get West of Bayou Nezpique, the links turn into rice bombs.
But…I think Billy’s is building a spot connected to the Henry’s truck stop in Lacassine, off I-10 Exit 48.

I think you're right about the rice to meat ratio at the Mowata Store.. and honestly when Johnson's was in Eunice, their rice to meat ratio was higher. The complaint I heard alot was, "It's just rice and pepper." When they moved to Lafayette, they increased the meat ratio.. and very interesting observation on the meat to rice ratio in Acadia parish.. I think you're right and I never realized this..
The area has a heavier German influence than French.. There's no Coonasses.
Billy has a marketing firm that he runs numbers with to determine potential profit margins before he builds.. and he consistently outproduces the marketing speculations.. by like 500%.
