Same for me. Boudin is like pizza and Bloody Marys. Some are definitely better than others, but they’re all pretty damn good to me.

Billys is probably the most overrated.
Kartchner's is usually at the top, depending on who's cooking it for the day. When it hits, it hits.

I've lived in Acadiana all my life. I've had tons of boudin from all over the area. I've had great boudin from everywhere mentioned in this thread. I've also had meh boudin from everywhere listed in this thread. They all have their mix, which, on a good day, fresh ingredients, a good cook, etc.. is great. Sometimes you get old boudin that's been sitting in the warmer too long. Somtimes you get the one they pulled out the freezer and it just thawed up.
All that to say, the best boudin is free boudin. And it's best enjoyed with an ice cold beer. Hell break out one of those NA 0.0% alcohol ones if you have to.

Johnson's when they were in their old store in Eunice back in the day was the best I ever had. And its not even close. There were 2 brothers that worked the back. When they were both working it was "ON". Amazing boudin and spicy. If anybody else was working it was shite. I would just leave.
Today, those 2 brothers are gone. The family has moved the business to Lafayette. Called Johnson's Boucanière. I have heard its not the same.
About 10 years ago Eunice Poultry had excellent boudin. But something happened. I guess the cook left? Last time I had some there it was shite.
Today my favorites are:
Billy's (hit or miss)
T-Boy's (very consistent)
The Best Stop (hit or miss)
None of these can compare to Johnson's in the 90s

Billy's was my go-to in Scott until the lines became too long. Then Kartchner's opened up a store across the street (I-10) and it's where we go now. Has never disappointed and has been consistent.
Bonus: Kartchner's crab pies are not to be scorned.
As for flavor density, it's hard to beat boudin. But from reading the comments above, it sounds like it's really dependent on who's actually making it.

Bourque's, T-Boys and Ray's are my favorites but I agree that free boudin is the best.

Rays in Opelousas. Not as spicy as others and for some reason a lot drier, which I like.

Same here. I had friends from Eunice back in college and we would get Johnson's often back in the 80s. It was incredible.

Which for me is why I'm generally not a fan of boudin from spots West of Acadia Parish. And even in parts of Western Acadia Parish, I find the boudin to be too "ricey" for my personal preference.
