St.Louis.
I buy the 2 1/2 down spare ribs and cut the St. Louis myself. The trimmings make a nice gravy.

St Louis
I do baby-backs now and then, but they are sort of like the chicken breast of ribs. Whiter and drier meat. St Louis are more like dark meat with more flavor.

St Louis ribs have a higher fat content leading to more flavor. Baby backs do have more meat, but are leaner as well.
Baby backs are for when you need a bunch of ribs and will sacrifice flavor for more meat.
