Appetizer for Mexican Themed Dinner Party

Our monthly Dinner Club is Mexican themed for April. We're in charge of the appetizer. Need some ideas for something outside of the typical salsa and guacamole. Was maybe thinking a shrimp ceviche. Any suggestions from the F&D board?

People love them some queso. I like to do a super loaded up one with rotel, chorizo or jimmy dean, spinach, etc. I have a small dip sized crock pot which is perfect for it.
Ceviche is crazy easy to make, and is a nice contrast to what I assume will be super heavy food. I use this Emeril recipe and do shrimp ceviche. I find people prefer shrimp over fish if there are picky eaters.
Seven layer dip is always a hit at parties.

My wife used to make these mini pepper nachos for stuff like that. Basically making nachos but instead of chips you use mini peppers

Cerviche is a good idea. A bean dip is always good. Nachos such as a crawfish nacho or shrimp nacho. Place by me Serves Sopa de pescado, fish soup, as an app

One of our family's go-to apps is seven layer dip. It has all the stuff (refried beans, guac, salsa, sour cream, cheese, peppers, olives, etc...) to enjoy with tortilla chips! It works great as an app and then left out for continual eating as the party continues after the meal!

bacon wrapped cream cheese stuffed jalpenos grilled (not sure if that is mexican) , but they will eat as many as you make

my sister always makes pin wheels

Make the margaritas right and no ones gonna care what apps you serve. You’ll be able to get by with Tostitos and Lays cheese dip.

LL, do you cook the shrimp per the recipe or just add them raw? Or have you ever used left over shrimp from a boil?

I did this pulled pork tostado as an app for a dinner I cooked. It has pulled pork, Mexican street corn, arugula, pickled red onions, chipotle crema, and cojita cheese

Nacho cheese sauce
All you need is the sodium citrate. Can melt in a pot instead of sous vide and blend. I just use a stick blender.
Quick and easy.
