Anybody Ever Done Sous Vide Eggs?

What's your favorite method?

Are the eggs hard to peel?

Definitely depends on how they are being served.

I wouldn't waste the time for hard or soft boiled eggs as there are faster & easier methods. But for something like an onsen egg, sous vide excels.

It’s not like you’re tending to them the entire time.

You put them in the water, set the temp, and leave. Takes 5 seconds.

Never done sous vide, but I love doing InstantPot hard boiled eggs. So easy. 7 minute cook, 7 minute release, 7 minute ice bath. Perfect every time.

This. I'll never get using the install pot or sous vide for eggs. You Just need a pot and a timer for perfect eggs.

Put eggs in sauce pot fill with cool water. Bring to boil, turn off heat and cover. Set timer for 13 minutes. Perfect hard boiled eggs with no sulfur ring.

Seems to me the sauce pot is the real instant pot.

I've done "poached" eggs sous vide a few times. You crack the eggs, and they come out beautifully intact. Put on a piece of toast with salt and pepper, and it's great.

America's Test Kitchen says 167 degree water, cold eggs from fridge, for 12 minutes. Slotted spoon to ice water bath for a minute.

Anova says 167 for 13 minutes. An alternative with similar results is 147 for 45 minutes.

I found that even 167 at 13.5 mins left the eggs a bit too runny. 14 or 15 minutes was better for me, and the time in ice water should be minimal, just enough to stop the cooking and cool them to touch, as it will make the egg inside cold.

You can write different times on eggs with a sharpie, take them out per the timer, and compare.

I’ve heard the key to good sous vide, especially with eggs, is to have someone pounding you in the arse from behind while prepping it.

White all the way cooked, yellow still fully runny...it’s somewhere between 145 and 150 (from that chart).

Pretty much the only reason I’d buy a SV unit.
