Cornbread Dressing
Sweet Potato Casserole
Bacon wrapped fresh green beans
Potato Salad
Chicken and sausage gumbo
Corn with peppers and onions

Sounds pretty good.
We're doing Thanksgiving with 8 friends this year. Usually would go back home out west but a bunch of family members tested positive and are still quarantining, so not much point. We can schedule a food bash anytime in the future.
Fried Turkey (turkey is trash, I'll eat it but the greatest holiday and we chose turkey as the meat?)
Honey Ham
Mashed Potatoes
Cheesy Potatoes
Oyster and regular stuffing
We're all mid 20s, request was made for everyone to make at least one dish. I'm slightly terrified.

Gonna be a small, laid back Thanksgiving. Got two 3 lb boneless turkey breasts that I’ll throw in a brine tomorrow. Will toss them on the offset Thursday morning. One for Thanksgiving and one to slice for sandwiches. A little 6.6 lb ham to throw in the oven. Thawing out some gumbo to heat up with some new rice. The rest will be cornbread dressing, mashed potatoes , gravy, green peas, candied yams, a green salad, brown and serve rolls, store bought pies and calling it done. :)

In years past I had as many as 25+ people show up at my house on T-Day for the meal and a big get-together and the menu was usually as follows:
Gumbo with rice
Giblet Gravy
Baked Mac & Cheese
Sweet Potato Casserole
Green Bean Casserole
Cornbread Dressing
3-4 Fried Turkeys
Stuffed Mirliton
Assorted Pies and cookies
Beer/Wine/Spirits/Juice/Sodas/Bottled Water
This year it's only going to 3 of us at most and I'm frying 1 turkey, making a small pan of Mac & Cheese with Giblet Gravy and an Eggplant/shrimp/cheese casserole.
Of course the above drinks will be on hand, just not as much.

I'm in same boat. Tough to scale back so damn much to cook for 2 on Turkey day. Roasting a turkey breast, cornbread dressing, gravy, cranberry sauce, candied sweet potatoes, cauliflower au gratin, pumpkin and pecan pie. Wife asked for mashed potatoes and mac and cheese. Not sure if I'm going to do those or not.

Yep. I would normally have started the cooking and prepping on Tuesday with cooking my gumbo and giblet gravy. Then on Wednesday I'd make all the casseroles so I'd only have to put them in the oven to heat up while I fried the turkeys.
I can do everything on Thursday now.

We do Thanksgiving with my SO’s family in New Orleans. They know I love to cook and I always go overboard and show up with more each year.
This year I’m doing -
Twice baked potato casserole
Sweet potato casserole with candied pecan topping
Creamed corn and sausage pudding
Bacon spinach dip
Rocky and Carlos style mac and cheese
Also picking up from a friend’s bakery -
Pumpkin pie
Buttermilk pie
Lemon bars
They’ll likely have broccoli and cheese, the Turkey and the pork roast, shrimp mirlinton casserole, beef stuffed sweet peppers, carrot soufflé.

If you are cooking anything like Rocky and Carlos, you will need a fork lift to pull it out of the oven

Arse posted the recipe here once and I made it a while back. You're 100% right. It is a brick. Our family loves it.

I absolutely love greens, but I think I'd be the only one eating them. LOL.
I used to bring boudin each year since its not nearly as common over there in NOLA, but everyone was weirded out by it so I'm not bringing any this time.
