How do restaurants get away with not refrigerating ketchup?

Rats. I just gave my chef, sous chef, and the kitchen staff the weekend off, otherwise I’d get a quick answer. Excited to devour one of those (what I would usually find ghastly) frozen pizzas tonight!

are you 5, ketchup is for kids ? Refrigerating the stuff makes it worse. Do you refrigerate mustard and hot sauces too, they recommend refrigeration ?

A good seafood place always has one of those big mayonnaise squirt bottles full of tartar sauce.

Same reason why restaurants leave opened bottles of ketchup on the table
The acidity keeps it shelf stable.

The ketchup you see in the Hienz bottle isn’t really Hienz Ketchup either.

Think about that.

They refill those Heinz bottles daily with cheap generic ketchup.

I don’t refrigerate ketchup, nor mustard (except zatarain’s creole, b/c it says it’s required after opening).

Heinz “ recommends” refrigeration. It’s not “required”.

My refrigerator space is at a premium, and nothing that doesn’t need refrigeration gets it. And I have 2 refrigerators, so don’t start with me.

Do you not realize that a lot of things don’t actually need to be in the fridge? Ketchup, mustard, butter, soy sauce, fish sauce. Use some common sense.

I know what the container says, but that stuff is designed to sit on a diner table for weeks.
