What's your favorite blood orange idea?

The Publix near me had some blood oranges for the first time ever. I grabbed four of them. I may grab some more later today.
I've never had a blood orange. I figured I'd peel one and eat it, but I'd like to do something interesting with the rest.
Suggestions?

It also gets along very well with seafood like shrimp, octopus, and squid. Coquette used to have a fried shrimp dish with blood orange (or other citrus segment) and a sambal vinaigrette that was awesome.
It would probably also be pretty good as a marinade for an Cuban style pork.

Peel, thinly slice, layer on a plate w/sliced fennel, pitted black olives, and a drizzle of fruity olive oil.

I had a massive amount of blood oranges gifted to me this winter. I made blood orangecello. Well it's in process. Blood orange bitters, also in process. Blood orange ice cubes with the left over juice. Many many blood orange old fashions.

Cocktail applications are choice hoever, if you want to expand your repertoire, I suggest a blood orange 'gremolata'. It isn't made in he traditional way with garlic or anchovies & is meant to accompany fish. I start by zesting one BO, cutting out the supremes, & juicing any residual pulp. Dice the supremes & reserve. Add chopped parsley, mint, salt, & evo. Goes great with any white fleshed-flakey fish.
