If you really want to smoke it, do so with care. Smoke @220F until internal temperature reaches 140F about two hours. That should impart a nice smoke flavor without over cooking it. ...

Headed to Greece & Turkey and need recs on where to eat in Athens, Tourlos on the island of Mykanos, & Perissa on the island of Santorini as well as Istanbul. Noted a couple of places on tripadvisor but I respect the FDB's opinion over TA. Cheers!...

true, but... there are ways to manipulate each ingredient as to reduce their assertive flavors and accentuate the subtle nuances of each so the dish is balanced....
