If you really want to smoke it, do so with care. Smoke @220F until internal temperature reaches 140F about two hours. That should impart a nice smoke flavor without over cooking it.

Headed to Greece & Turkey and need recs on where to eat in Athens, Tourlos on the island of Mykanos, & Perissa on the island of Santorini as well as Istanbul. Noted a couple of places on tripadvisor but I respect the FDB's opinion over TA. Cheers!

Cocktail applications are choice hoever, if you want to expand your repertoire, I suggest a blood orange 'gremolata'. It isn't made in he traditional way with garlic or anchovies & is meant to accompany fish. I start by zesting one BO, cutting out the supremes, & juicing any residual pulp. Dice the supremes & reserve. Add chopped parsley, mint, salt, & evo. Goes great with any white fleshed-flakey fish.

Poach red potatoes in salted water until tender. Drain & allow to cool/dry. Preheat oven @425'F Cut potatoes in half & toss with melted butter & a liberal amount of Cavender's. Roast until crispy stirring potatoes every 15 minutes.

true, but... there are ways to manipulate each ingredient as to reduce their assertive flavors and accentuate the subtle nuances of each so the dish is balanced.

Asian Slaw
#1 green cabbage - chopped
#1/4 red cabbage - chopped
3c rice wine vinegar
2c sugar
2c kale - chopped
3c carrots - shredded
1c green onions - chopped
2c sugar snap peas - whole
1 8oz bottle Makato ginger dressing
Place red & green cabbage in leak proof container, dissolve sugar in vinegar & pour over cabbages. Allow to macerate 1 hr then drain. Toss with remaining ingredients & serve.
