I usually do a gumbo with andouille or do poppers but this year I’m trying something new, stir fry. I use Hank Shaw’s recipe for deer stir fry where you “velvet” the meat and will likely do the dove the same way.

You gotta try this in September then.
Dove Picante:
12-15 whole dove breasts
2 large yellow onions diced
1 bell pepper diced
1 garlic clove crushed
1 large jar of Pace Picante sauce
1 stick of butter
Tony’s seasoning.
In a Dutch oven, brown seasoned dove breast in butter, then dump everything else into pot. Put lid on and place into 275 degree oven for 3 hours. Serve over rice, pasta or mashed potatoes.

My wife once worked for an attorney who loved hunting dove and quail.
Neither he, nor his wife liked to cook so he would send me cleaned dove and quail and I'd use them to make a sauce piquant and send most of it back to him and keep a bit for the wife and I to enjoy.
Hated it when she left that job, but did so for better pay and closer to home, so it was all good.

When I've dove hunted in Argentina, the guides sear the Dove breast in the field and make street tacos while we drink a few Quilmes.

I like them best cooked down slow smothered in onions on top of biscuits. The best way I've ever had them was cooked by some good ole baws from Georgia. They battered and fried the breasts, then threw them in a white gravy, and we ate them over mashed potatoes. Frickin outstanding. I'll eat them any way you make them, and if you get tired of eating them, just let me know and I'll come take them off your hands to help make room in your freezer. Better yet, just put them in the fridge in a trash bag and I'll come breast them out myself.

As far as a game bird for eating it's pretty damn good! It's not like dove is on the weekly rotation for meal planning. The season comes, your shoot em, and eat em. Then you move on to the gourmet stuff, right?

We found them west of Hobbs, NM.
One veteran dove hunter said they were thick as mosquitos in the marsh.
