No shite. It's because your property is essentially your collateral on your property taxes.
Quit making payments on any loan where you use your property as collateral and see what happens to your property. Hint you don't get to keep it despite owning it!

In what sense? Personal property taxes and real estate taxes are based on ad valorem - the FMV x's a millage rate. Most states do not impose a true property tax on vehicles held by idividuals. Missouri does. And a handful of other states. But do not confuse personal property tax with tag fees.
Tag fees are a property tax. In every state I'm aware of, you can't even have a vehicle sitting on your property that you intend to never drive unless it has a current tag.

If I have paid for my house out right, what loan have I quit paying?
Can I ever pay enough property taxes to where I no longer have to pay any? If not, I’m simply renting my property from the government.

You should not have to pay property taxes after a certain amount of years.
In 20-30 years, most people will not live in houses but apartments. Which is worst because you can never own it.
People need to go go to these city council meetings and watch closely at what they vote.
They love raising millage rates.

More people will use bicycles in the future.
They will find a way to tax it.

The government will play the long game. Keep raising property taxes, they will confiscate the land and give it to illegal immigrants.
Next you live in a shitty apartment paying $3500 a month and rent goes up $200. You can't pay and get evicted.
You don't own a car because only the rich can afford it and so you are homeless going from one shelter to the next.
That is the future of America.

When they sell a property due to delinquent tax debt, it is offered as a fire sale - solely to pay off the tax debt. Goes to the highest bidder for next to nothing. The loss will be huge.
This used to be the case but incorrect now. A recent USSC said they have to sell it as Sheriff sale to get the most money and the difference goes to the owner after deducting taxes.

If you paid off your Mortgage then you shouldn't have to pay property taxes.

What is this "tag" you speak of? Only bootlicking figs brag about paying fees. If you pay for gas you're paying for the roads. Brake tags were welfare to campaign donors, good ol boys, and to fund Huey Long's militia, I mean the State Police who, as far as I can tell, spend most of their time pulling over minorities and role playing like they're still in the marines, I mean, the army, I meant national guard. The number of redneck, big truck, double wide bleed red white and blue who larp on here like tough guys is sad. The state's getting boofed every kind of way, with "Maga" Landry happy to sign it all away in secret. We're paying hundreds of millions of dollars in corporate welfare and actual socialism every year to the plants, to the utilities, to frickin' elon musk now, and your tired arseholes are worried about some break tags are going to be the thing that ruins public finance. Get bent.
