Northern NM or southern Colorado. Incredible weather with low humidity and nice scenery.

This isn't remotely true. It's the 2nd largest by area but that just accounts for all the land in the hill country up through the panhandle
Multiple AVA's in California, Oregon and Washington produce more wine

I know multiple people have replied already, but to add yet another angle: the overwhelming majority of wine “produced” in hill country is made from grapes grown elsewhere. Most hill country wineries aren’t vineyards, at least in any practical sense. They are wine factories and tourist destinations.
And most of the wine isn’t very good. I wanted to like it, but most of the reds have a strong sour cherry note that overwhelms everything else.

You want 4 seasons a year, North Georgia/Western North Carolina is your best bet.

Man you just can’t beat western North Carolina…especially around Asheville.

Hill country is pretty vast, but this is what I usually see west of Austin. Not sure where you went.


After living in flat as hell Louisiana up until college, the hill country was very nice to see.

Mild and wet July and August this year. Hot September and October. Been in Austin/SA area since 1997, fall doesn’t reliably start until Halloween, then it’s over by thanksgiving. It is what it is. Don’t think the weather has really changed much, just a LOT more people here.
Pro move if you like fall is head to Rockport/Port Aransas in late Nov thru Christmas. It’s fall down there until January.

Texas Hill country was an"interesting" area before it becomes over hyped and manufactured hype to make it more than what it really is. It's hot without humidity. If you not on a hill there is not much breeze.
