Apparently, it can go from 0-60 in 2 seconds. all electric.

It’s a jeep thing. Trying to get our MPG up for the regulations… go fast, get there fast, use less gas. Duh

Probably just a side effect of the desired torque rather than a design goal. Would you rather they electronically limit the acceleration?

Which leads to my question, obviously if it can go 0-60 that fast, and one of the benefits of the Rubicon models is lockers and low range t-case, how do the electric motors work in a way to not just do speed but mimic a low range and slower wheel speed to crawl?

Short wheelbase - Kinda...(12" longer than the 2 door wrangler)
High center of gravity - Check
5hit-ton of torque - Check

Electric motor rpm can be controlled precisely, and full torque is available throughout pretty much the entire rpm range so special gearing isn't necessarily required.

Edit: JFC looks like it has a 6 speed manual plus low. I can't imagine all that being necessary, so either it was just cheaper to convert it that way or they just wanted absurd capability?

You have hit on a reason the massive torque might be deceiving. Off road vehicles usually take significant advantage of torque multiplication by using a very low range set of gears in the transfer case. This concept uses a Rubicon Rock-Trac transfer case and Dynatrak 60 front and Dynatrac 80 rear axles but the torque figures themselves mean nothing until you know all the ratios. The effective torque could be more or less in 1st gear lo range compared to a 250 pound feet 6 cylinder. It all comes down to the total gearing.
