Consistency is what brings me back to J Alexander’s. Excellent prime rib. That location at the MOL has stood over time. Whenever I’m back in BR I always stop in a couple times per week.

PF Chang’s and those lettuce wraps!

Talking about fine dining to people is like talking about high end audio to CAD. He has no point of reference and therefore thinks that a SONOS system sounds fantastic. It's the same with fine dining. If you don't have the same point of reference as the other person you're both looking at it from a different perspective.

I know of one person in this thread who has eaten at Osteria Francescana in Modena, Italy. It's regarded as one of the top restaurants in the world.

That person may view fine dining much differently than another poster who hasn't had that type of dining experience. Doesn't make them any better but it does mean they've been exposed to a level that most never experience.

When revenues began dropping in 2008. There was a huge drop in revenue in the casual dining industry from '07 to '08. The industry didn't recover until '13...by then, they had scavenged themselves and each other just to survive. Couple that with really low unemployment, and you have companies that aren't reinvesting like they used to and are employing people who know if they lose the job today, they will have another one somewhere else tomorrow. Look at the experience you had in these places in the early '00s to now, and it is entirely different.

I mostly eat out at at a local establishments throughout the New Orleans area and the Northshore, and the more I eat at such places the more I wonder why mid tier chains are still in business. The wait staff at the local places take pride in their job, seeing the owner/chef work their arse off means a lot to me. The food is superior, and have reasonable prices, and at times the same or lower prices than the chains. I attended a jazz brunch yesterday for a family of four with bottomless mimosas for $70. The atmosphere was timeless and felt like I was on a vacation. You cannot get that charm from the chain joints.

I wonder why people still go to chains. This is my feeling:

-People do not know any better.
-They know what they are going to get. Consistency of menu items.
-They perceive the local restaurants as stuffy or pretentious, even though they are casual.
-They want their food now. Chains churn out food fast.

I’ll echo what I said last week in a similar thread. Once they started putting these chains in every suburban mall and shopping center restaurant culture changed for the worst. Going out to eat used to be a luxury and most places held some sort of reverence or formality about the experience. It’s been cheapened.
People go to places just to eat. While they throw aouround phrases like causal dining, fine dining, upper end, high tier, and what not most full service restaurants are still more like quick service or fast food than formal dining. Menu’s and service are basically designed to be quick and be done.
I personally miss the days when dining was and event in of itself. I very rarely visit most of the chains mentioned here but I also don’t have a chili’s, Olive Garden, roadhouse grill, Fleming’s, Pf Chang’s, etc within 200 miles of where I live. There’s an Outback but I’m pretty sure it’s on the same scale as denny’s by most people’s standards.

Doesn't matter what level of restaurant you're eating at: the majority of people in the kitchen have a record, a substance abuse problem, or both.
