So it's unhealthy......doesn't mean you just change what it is. Would you buy a dozen donuts, but when you open the box, it's a salad, then just think "cool, healthy donuts".

My sister tries to make a "healthier" roux-less gumbo. She browns onions or something to a point to get the dark flavor. It's edible soup. It isn't gumbo. Tastes nothing like gumbo. So why does she try to call it gumbo? I assume it's because my sister is fricking stupid, but that's just a guess.

I'm all for people eating better, but let's not walk around faking shite just to trick ourselves. There were only a few ingredients in that dish I'd put in a gumbo. And the process was certainly off. I'll give some leeway since it is a concoction of random stuff (such as I don't use okra and rarely use file). But at a base, you have certain things that make a gumbo, and it's mostly the roux. That's where the flavor comes from.

The real issue is Disney putting out recipes. Wth?

Ohhh you mean the Houston way of boiling crawfish?

Let's even ignore all the terrible ingredients they included and just focus on technique.

First- they overcrowd the pot with the veg in THEN add the oil getting no color and no flavor.

They eventually add the shrimp BEFORE the kale and cook the shite out of it. It takes a while for kale to break down to the texture they showed. I bet eating that shrimp was like trying to chew a condom.
