It’s not 15%. The tipping standard is 20%. The tipping on the bottles of wine is your prerogative, however the way I see it, if I order $50 bottle of wine at a restaurant, I can afford to tip $10 on it and not complain about it.
Either way, they are grabbing, uncorking, and pouring a single bottle. Tipping for the sheer percentage is just throwing your money away in order to appear savvy and affluent.

I tip well because I'm not incapable of empathy. I appreciate what those folks go through with arrogant customers.

If it is a young server who is trying hard we normally tip well and if it is an experienced server with exceptional service we tip well. If it is normal service we tip the normal amount (20%). I have been known to very occasionally leave a 10% tip if someone really gives me bad service or attitude.

I tip based on a number of factors. Service is the main one but also if it is a restaurant I frequent near my house I usually tip more. I like when things near my house have nice workers and service and they recognize me and appreciate my business. I could easily tip 30% if my kids make a mess at a restaurant I frequent regularly near my house.

I overtip at places with young people.
If I go to Louie's, for example, I tend to tip $30-50, regardless of the tab. They are just kids, and they really need the money.
If at a regular eatery, 20% unless you were just amazingly bad.
Waitr, I max tip, plus slip them a 10 when they show up.

I regularly tip 25% because I live in a small town where there’s a limited selection of places to eat. I can’t tell you the last time I went out to eat here and had a server that hadn’t waited on me 5 or 6 times before, so it only makes sense to take care of those people. I tip less out of town unless the service is really good.
