Yep. My feet like Saucony. Brooks came highly recommended, but I hated how they fit my feet. I liked Hokas as well, but they're so damn ugly.

If you’re trying to learn to hit a baseball do you work on mechanics, or do you buy the most expensive bat, hitting gloves and sweatband swag? Which is more important? Most people have never once in their lives really worked on their running form but trust some guy at a store to sell them shoes based on a sample size of about 10 steps that will heal all their problems.

Correct. You could post a picture of your arch and I could “fit” you for running shoes. Doesn’t mean you’ll like them or they will be comfortable.

I've only ran in the 11 and 12, and yeah, the 12 is a big upgrade from 11. I've been rocking my current 12's since November and they're still feeling great. I'll probably get a new pair sometime mid summer.

This is an interesting post for a few reasons. One, it seems like the entire world agreed with what you're saying about five years ago. But, the minimalist fad has died down a bit. And, Nike has seemingly gone in the other direction with the mega cushioned juiced up Nike Vaporfly 4% or whatever that dominates distance running.
All of that said, I do think there is a point of diminishing returns on cushion and you need support. I used to love Nike Vomeros, but they are too padded and hurt my arches now. I am back to Air Pegasus. UA HOVR Phantom RN are also really good.

I am running Altra Pardigms. Really helped my plantars. Did I learn this from a podiatrist? No. College kid from Fleet Feet. I haven't been this comfortable on my feet in 5 years.

Bought some Sauconys at Varsity just before the stay home order and they're ok. Was looking at the On Clouds, but was swayed away because I have a wider foot. I was looking for a very low drop (4mm or so) so that I could transition from workouts to walking/running, ideally without needing to change shoes. Guy at Varsity suggested Saucony Kinvara and I went with them, but I'm still looking for something better.
I'm not sure the OCs would fit the bill (probably won't), but I'm still interested.

Hoka. Upgraded to Clifton 6's recently. Best shoes out there in the 100-150 range that I've found.

Same. Went to Varsity Sports dead set that I was getting some Brooks. Tried on a few pairs and didn’t like any of them. Tried on some Saucony and they felt great.

For running on a treadmill, I really love the Nike React Element 55. I fell in live with them as soon as I put them on my feet. I believe they regularly run about $140, but I saw them on sale quite a few times for $80 at the Nike outlet store. Depends on the color.

I love my On Clouds...
For walking the dog and running to the store. Not to say that they're not solid for more, but side by side with my ultraboosts I just can't find any activity I prefer the OCs for. That said, the weight of ultraboosts don't bother me, so YMMV.
I used to love Brooks but they refuse to make anything that doesn't look like a geriatric walking shoe.

Altra escalantes or vanish depending on how much cushion you prefer.
