I think part of if it just the social capital that comes with being "different" or some sort of victim that requires accommodations. Sad how our culture has morphed into encouraging and celebrating weakness.

This. And it is absurd. Western diets have been grain centric pretty much since the birth of agriculture millennia ago. Our digestive systems are pro at processing gluten now.

I read a study that said that early introduction to beef products has a big impact on gluten sensitivity. The scientist said that the reason all these little millenials are gluten free these days is because they didn’t get the belt growing up

Maybe it's the Roundup that is used in big ag now as the last step before harvesting the wheat.

That's right. Farmers spray Roundup on your wheat because uniformedly dry (dead) wheat is easier to harvest and process.

We have a Celiac kid in our family. Found out when he was 2, thankfully.

I do remember reading an article a while back referring to a wheat glut in the US market back around 2000. That glut led to use of more wheat products as fillers to the point where now way more food has wheat in it than in the past. And, technically, wheat being a grass, our digestive systems didn't evolve to eat grasses as humans weren't capable until they had developed the technology to grind it into flour - which came with early cultivation and civilization. That's why a ruminant's stomach is so much more complicated than a primate's. So perhaps we're just not 'designed' to be digesting all these wheat products, and some are just more sensitive than others.

Most of the people I know who say they have gluten sensitivity are more like the all-natural, fit, thin, hypertensive chick types.

I also have a niece with Celiac who struggled as an infant until they figured out she had Celiac. She's a married woman with a child now. She also scoffs at most people's claims of nonceliac gluten sensitivity.

I have a close family with legitimate celiac disease, where he gets very sick if he has gluten.

The whole "gluten sensitivity" stuff makes it seem like even those with celiac disease are faking it and makes people like my family member, who actually can't have gluten, look worse.

I think a lot of people who think they have "gluten sensitivity" actually may have an allergy to wheat or to the GMO modern wheat.

Or steak and potatoes.

But you still have to be careful because they're putting wheat products into things they never did before, MSG, for example. The glutamate can come from wheat gluten. I believe originally it was made from seaweed. So wheat gluten can end up in sauces on dishes that really shouldn't have anything to do with wheat.

How do you cross contaminate bread and chicken?

It would suck to be relegated to only two restaurants on the planet. Hope you get to eat out on your own occasionally.

I would not count myself as sensitive to gluten at all, even after what I'm about to type. 12 years ago, I went extremely strict paleo for 5 weeks. Lost 25 lbs in 30 days, slept better, abs showing, better motor in workouts, but lost some muscle mass not balancing macros. Chiselled up like Rick Rude...

To celebrate hitting the goal, I ate pizza and had a few beers on day 36.

I shite liquid for a couple days after that. I still like pizza. Thanks for coming to my TED talk.

Can't have garlic and onion. Can't have about half of the vegetables available on a menu.

It's easier to just stay home or eat foods we know are safe.

It's not the gluten, it's the wheat. I feel like crap if I eat too much. I usually just do without it.

Humans have been eating grains for millennia. We'd have to be the absolutely slowest adapting species on the planet for this to be a thing. You change your dog's brand of food over the course of what, ten days?
