Front of the house is servers, hosts, etc.

Back of the house is cooks, dishwashers, etc


12-14 is a paycut, so if you want Trynesha or Ladarius that works as Burger King to be your server at a restaurant, than that's what you would get if the restaurant paid servers 7 bucks an hour

FOH = Front of House

HOH = Heart of House (basically the kitchen)

Also I can tell you have never waited tables before if you think $12-$14 is too much pay for a server. It's not as easy as it looks. In theory it SHOULD be easy, and it is, until you have to deal with a shitty table or two and still tend to the other tables in your section.

I don't understand the popularity of Joe's & red lobster (although its fast food throw long john silvers in there). Unless people live where there isn't many options to eat fresh seafood, I don't see the appeal of these places.

I can't comment on Belgium, but at the average place in France I wouldn't say bad, just "different". They do not feel like they are their to serve you. They basically treat you as an equal as if you are both their and kind of existing in the same space. The customer is not king.

Its just a different mindset. I often wonder if a tipping culture would change that. (And contrary to popular belief, you do tip for good service in France, its just more like a couple of Euros/5%).

This is true.

The best and worst tips I would get would be from blacks. They seemed to be all or nothing - either a really really good tip, or nothing at all. Best tip I got was from a black man who asked me "How much do you think I should tip you?". I was honest and said "I think I was completely average.". He gave me $100 on a $30 tab

But white trash? They were universal bad tippers. I never got a good tip from white trash. Ever. The worst was an inbred family on vacation from Tennessee(no joke, they told me). They looked inbred. Everything seemed fine. No problems. Then they pay me in exact change, literally, with nothing but a pile of change and left it on the table for me to sort with a note that said "Don't have such a shitty fricking attitude next time". I didn't recall having a shitty attitude, but oh well.

This also happened on a Friday Night at peak business. A giant pile of change totaling $60 left on a table. I just had a manager sort it out.

If people tip the same for both good and bad service, and with price hikes they're going to be doing the same, how are you disagreeing that nothing has been accomplished

And what percentage of the entire white population is white trash? Perhaps <10%. Now, what percentage of the black population is trash? Your comparison is not proportional. Just because every once in a while you'd get some white trash doesnt mean that you dont have about a 50% chance of getting stiffed by a black table. Im sure many in the service industry can back this up.

Will the kitchen workers demand higher or matching wages like the servers?


What servers made was always sort of hidden or unknown from the kitchen staff. Those guys are gonna be upset if their fellow workers are making more than they are.

Waitresses will be triggered, but now patrons can possibly negotiate a tip for a game of just the tip instead. You know just to see how it feels.

Joe's had a nice selection of crab when I was there and was the only Joe's in the country that offered Spicy Boiled Crabs. Funny enough, corporate made us stop using a Louisiana boil and it started dropping off after that.

I've never been to Europe, but I have heard that service isn't as "good" in Europe as America. Part of this could be cultural expectations.

And soon the servers will be calling to bring the tips back. They'll find out pretty quickly they'll make less without tips, even with higher wages.
