Because they are idiots.
I was a closer so I would have to stay to the very end, and make sure the cut servers did their closing duties before they could cash out and leave.
These idiots would pay me $10 just to get me to do their closing duties. Some of these closing duties were easy and took like 5 minutes to do. $10 to get out of doing an easy closing duty? Now imagine how stupid they are in other financial areas.
Some nights I'd make $100 just in closing duty payoffs alone.
Also staying that extra hour or two added up in the long run. Usually I'd have regulars that would come in that late and tip me well, plus if it got busy I'd have 6+ table sections because they cut everyone else and make good money that way too.
The downside to closing was you'd have the occasional black table or stoned table come in 5 minutes before close, and cause all kinds of trouble and stiff you.

Some people are just assholes. I've never waited tables a day in my life, but I have an enormous respect for people who do.
I usually tip 20%+ when I have good service, doesn't even have to be great.
And I've been out to eat with couples who hold the waiter/waitress responsible over the kitchen being slow even when the glasses remain filled.
It's pretty shitty to hold the wait staff responsible for someone else's problem. So I have wound up tipping extra to subsidize the other people's tip at my table because it's not worth it to say anything.
Some people just look for ways to be cheap assholes.
I usually tip 20%+ when I have good service, doesn't even have to be great.

So we eventually caught on and our manager heated it up in the microwave so it was boiling when she brought it out to him. He would do this shite every week. Get things comped by lying, and then stiff. If you challenged him, he would loudly claim "THE CUSTOMER IS ALWAYS RIGHT" and make a scene then get a manager. He would also get up and follow his servers into the kitchen when he needed something, instead of waiting for them to come to his table, or just flagging them down at his table.
My managers had no balls to ban him from the place. Why would you want assholes like him as a returning customer, especially when he is costing money with all the comps?

The problem is that people are idiots and literally think everything revolves around them. They will see you also have 3 other tables to wait on, yet act like they are your only table and the only ones in the restaurant.
I haven't waited tables in years but still have nightmares about it. And when I go out to eat I still see assholes like this who treat their servers like shite.
When I eat out I always treat my servers with respect. Usually the nicer you are, the better service they will give you because they aren't nervous or intimidated.

I liked people like you. One time we had a power outage so it messed up everyone's order. Of course I had 4 tables at the time, and 3 of them threw a fit. I understood they were mad, but they all acted like it was my fault, as if I personally went outside to the breaker and cut the electricity myself. Those 3 tables stiffed me, but my 4th table tipped me huge and let me know it was to make up for the stiffs I got, even though I didn't say anything about it. They just knew by observing my other tables.

No I made less. I also made alot less while working my arse off in cotton and rice fields and shoveling horse sh*t back in the day. The job wasn't worth the pay so I left that job and got another one. There are shitty jobs every where nothing makes waiters special and nobody is putting a gun to your head to make you stay there.

I believe tipping says more about myself than the service. I would say 90% of the time when the service was bad, it was at no fault of the server themselves. So a generous tip could really make a difference in their day, or their life. You never know. My favorite tips were good tips I got when I was expecting a stiff because of a snafu of some sort and it would always turn my mood into a good one.
For the 10% of the time it was the fault of the server, maybe they are just having things going on in their life that I don't know about. Who knows. A good tip can make a difference for them if that is the case.

I pretty much act the same way. There is one exception. If you are loafing around and just don't give a crap and intentionally being lazy, you're going to end up in the 10-15% range. Pretty much everything from bad (busy bad) - average will end up in the 20+% range with good - great getting a 25+%.
I don't think it's so much about what it says about me as I don't eat out that much and will likely never see most of these people ever again. I just know how much getting that 25-30% tip can pick you up if you're having a hard night. Like just having that one "frick Yeah!" moment from getting that $20 on your $58 tab puts that extra pep in your step.

Yes
Working in a bar and working at the casino were both awesome because the customer is drunk (even when they're not) and I'm not. I looooooooved when people would complain to my manager that there wasn't enough alcohol in their drink. I knew a fun show was going to follow.
