I think accounting or some form of personal finance course are certainly worthwhile.
That said, I feel like most people who would get the most out of such things will come to that knowledge anyway (I've never taken a single accounting class), and those who wouldn't gain that knowledge/practice otherwise wouldn't get anything out of it.
In short, I don't think required core courses matter much, especially at the collegiate level.
Full bore classical education in HS would be a different story, and would likely produce college kids that are far more receptive to the advantages that would come from the mandatory accounting classes you reference.

I think the most useful course I ever took in my life was a consumer math course in high school. I was a dumb shite in math and wasn’t going to pass calculus and trigonometry so they put me in the consumer class. It taught how to balance checkbooks, gave us business ledgers, how to do our taxes, etc. It served two purposes...I learned a lot of useful stuff that has actually helped me in my life, and it was a seriously great senior skate course

Principals of Accounting is extremely useful if you ever think you will own your own business. If you are just going to be a worker bee your entire life, it's probably not of much use.
I would say a free enterprise / basics of economics class would be the most useful. The number of OMG price gouging posts I see on facebook lately tells me large numbers of people have no idea how supply/demand work.
I strongly believe that a half-credit personal finance course should be required in high school, probably junior or senior year.

having those numbers in your bank account helps you enjoy the other parts of life.
Imagine if you not only knew how to do accounting as job, but used that combined with Econ courses to study financial statements and industries for investing, or for some people, you would at least know how to balance a checkbook
