Unless things changed, liquor stores are not open on Sunday. It used to be, they didn't sell beer either on Sunday at stores. Might have changed though. Not sure if they still have 3.2 beer (sold in convenience stores vs liquor stores).
And they have full strength beer now thanks to Quiktrip

Wichita isn't that bad - there are is a pretty decent restaurant scene there, a minor league baseball team, some decent music. I worked there for a bit - got really fat, but it was ok. I probably wouldn't move back, though.

Been there and that's place is actually pretty cool. It's the largest privately owned collection of space memorabilia.
Hutcherson CC has some really good college football players as well.

My son was stationed @ McConnell AFB for a few years. Not a lot to to, but there is a great aviation museum right outside the base. When we were there, they had a wing where veterans were building and reassembling planes for the exhibits. We wound up talking to them for a couple of hours. Not sure about restaurants. There are some nice golf courses and a zoo, but I can’t think of anything else. Honestly, it reminded me of Monroe LA.

My aunt used to live across the street from the base. Would watch B-1’s do touch and go loops all day. Was awesome. I don’t even know what aircraft is on base anymore.

I lived there for 5 years. Is it the greatest city on earth, hell no. But for a variety of reasons, many societal, I liked it much better than S. Louisiana.
Everything lsu777, meeple and pedro recommended I would agree with. Also would add the salt mine tour in Hutch Salt Mine Tour(Cosmosphere is in Hutch too and really cool) along with a trip to the Wichita Gliderport Wichita Gliderport
They are usually flying on weekends and will take you up for a ride for around $30. I would always bring people who came to visit for glider rides and it's a blast. Hell in 6 months you could probably get your glider license.
Enjoy your stay and FYI the locals will tell you Kansas wouldn't be so windy if Missouri didn't suck.

There's a park right near the airport that is great for running and hiking. I will never forget running there and coming upon a herd of 15 or so deer who just lazily parted for me to jog right through them.
