I think it varies depending on the vinegar or PH level. Many don’t but some do.

It can alternate. Sometimes it’s in the fridge, sometimes it’s left out. It’s never gotten bad for us.

Not an idiot but she does think everything spoils if left out. If the boys and I order a pizza around lunch on Saturday we will leave it out a few hours in case someone wants another slice. She won’t touch it if it sits out for more the 30 mins.

HiHo's Barbecue in Hammond left their complimentary bottles of Crystal on the tables for weeks/months w/o refrigeration.

All vinegar-based hot sauce goes in a cabinet.

My go-to is Crystal with garlic. That shite is crazy good for general purpose use.

Hot sauces in our house aren't kept in the fridge.
No need to toss if vinegar is an ingredient.
