Its peppers and vinegar. Dont put that in the fridge unless you like it cold. I dont understand what the confusion is here.

Hot sauce and ketchup stay hot. Now Mayo on the other hand... I put it in the fridge. But there’s a bar I frequent where they always leave it out. No ones gotten sick yet.

Hot sauce will be fine left out. However it will break down and separate much sooner in the cabinet than if you kept it refrigerated. Same as ketchup. So if you want to maximize the quality and longevity of your hot sauce (or ketchup) keep it in the fridge. If you don't care about that leave it in the pantry. End of discussion

Depends... Well kind of. Most store bought hot sauce is shelf stable. Ph is below 4.7 percent and bacteria cannot grow in that environment. If the hot sauce is still alive (still fermenting) and was never fully pasteurized then you might not want to leave it out. You could wake up to Kahm or mold. I'm not even sure if you can buy hot sauce that hasn't been pasteurized. Lot of regs on fermented foods.

No refrigerator for hot sauce, mustard, ketchup, BBQ sauce, soy sauce etc. at my house. Same for my parents. We've made it for decades without incident.
I have bottles of opened hot sauce that have stayed in a pantry for years (usually gifts of unusual sauces), and they are good to go.

Idk if it’s been covered in this thread but I’ve recently tried Poiriers hot sauce and it’s pretty damn good. But it’s also $13 a bottle so I’m not buying that. Can’t justify spending that much on hot sauce when I can buy Louisiana hot sauce for $2.
