General discussion - American food supply relating to allergies (gluten, nuts, soy, etc).

I just got back from my honeymoon. Took a Western Mediterranean cruise with stops on Spain, France, Italy, and Tunisia.
My wife has multiple minor food allergies. Primarily gluten, which small amounts of bread or other items will cause a red rash type reaction on her neck. She had been to England previously but I’ve been to Europe a few times, and I had been telling her that I am interested in this trip as an experiment to see how she would react to gluten because I suspected it was due to the poison in American products and that she would not have the same scale of problems over there.
So fast forward to the trip, and she does not hold back on what she consumed with grains and bread. I figured the symptoms would at least be milder, but the fact of the matter is she had no symptoms at all. Not a single reaction on any observable level, which is quite a significant revelation with how much trouble it gives her typically.
So here is where I would like to have a general discussion on the topic. What is primarily to blame for this with the American food supply? Is it mostly on the front end with farming the crops? Glyphosate saturation and genetically engineered crops? Is it more so the processing and preservatives? Something other than those factors?
While I am not surprised with what I witnessed, it has made me angry. There are no shortage of things with our country today that make me angry, but seeing this extremely clear personal example with someone I love has me wishing I could do something about it.
How can we as a society push back and demand better? My mother who was a nurse often talks about how in the mid to late 80s the obesity problem reared it’s head so suddenly and drastically that it could not be ignored as someone working daily in the hospitals. Beds and gowns that hadn’t changed sizes for their entire history no longer were adequate, and the shift happened abruptly and with seemingly no explanation or outcry.
Maybe too many people are asleep and aren’t aware of anything outside of their immediate area? I wish more people could be exposed to these things. The people in the areas I visited were generally less wealthy than here, but looked better, live longer, and appear to enjoy life more. Our society is being robbed.

Hell, a lot of bread in the states wouldn’t even qualify as bread in other countries. It is overly processed and has an excessive amount of sugar.

Personally I don’t. And now that she is living with me she won’t be exposed to that either. But this is an issue everywhere you go out to eat with nearly any restaurant. It permeates society.
But that still does not give a pass to why this is allowed, as something that effects that vast majority of people at least unknowingly. Simply not buying products is not enough, there need to be answers as to why these things are happening.

GMO’s, glyphosate, seed oils.
ETA: there is a company that I order from called “wildgrain” and they send a monthly subscription box of stuff you want. It’s mainly sourdough breads but you can get quality pastas and desserts too.

Feeding millions of people isn't as easy as you think. Feeding a world is even harder. Go try and raise a herd of ruminants for food year round. And then go run a garden that just feeds you and your wife year round. It's damned hard work just keeping up with the moving stock to grow and raise everything you eat. Now take that amount of work and apply it to just ONE mid major city where people don't have the space or land or intelligence to do that.
It's not a conspiracy. But yes, it's not the right way our bodies want to eat. We should all be eating low carb, high fat diets for our health. But damn carbs taste good.

Food companies get paid to make people sick. Medical providers get paid to temporarily make them feel better. People die. Repeat process.
It’s a damn shame. Lobbyist perpetuate the issue. Only thing we can do is try our best to eat organic foods. The problem is why can’t all food be organic? I mean why are we paying a premium for food that doesn’t kill us? Sick situation, literally.

I am not sure I would go so far as to say that they are paid to make people sick.
I would say that there is zero incentive to make their food healthier and the ultimate goal is to make their food addictive, while keeping production costs down.

Well first of all, are any large studies being performed to determine the origins of these food allergies that simply did not used to exist at these scales? Everyone talks about peanut allergies, and how they used to not hardly exist but now every school has large numbers of kids with them.
The data has to be there first before decisions can be made to know what to do about it. But are studies like this being hamstrung?

I’m on the side of a major overhaul of the American food system. It’s not right that it is nearly impossible to know if even “healthy” food is actually filled with poison

The shite allowed in not just food but cosmetics, air fresheners, household cleaning products, etc in this country is sickening
Yes, we are literally making ourselves sick from it all and people are made to believe it’s beyond their control
There are options though; Look to remove as many chemicals from the household as possible.
From deodorant and laundry detergent to air fresheners, the meat we eat, the candles we burn, the toothpaste we use and whatever you use to clean your toilet…there are better options out there than what most people use in this country on a daily basis

Has your wife been checked for these allergies by a doctor. If you truly have a gluten allergy or celiac disease how the grains are treated during processing will have zero affect.

For sure. Most of the “organic” stuff is a scam. Lots of shady loopholes that allow that designation.
What I’m considering doing is starting to buy more things from this international market I go to in Memphis sometimes to get ingredients for when I cook Thai food. I might just start getting my flour and sugar and cornmeal from there as well.
shite something else I’ve been wondering is what is in these new zero sugar cokes? They are delicious, and it has to be something terrible in it.

Yes she has, extensive testing. So that adds more layers to this issue.
ETA I need to ask her exactly what all this entails

Exactly. He’s saying she doesn’t. That her reaction is to something in the gluten here that isn’t in the gluten in Europe.

I have the same thing. “Psoriasis” on my neck that goes away when i stop eating gluten for a few weeks.
