Fermentation and rotting aren't the same process. Wine is made by yeast fermenting the sugars in healthy grapes into alcohol. "Noble rot" is something different—it's a specific fungal infection (Botrytis cinerea) that's intentionally used for certain sweet wines like Sauternes and Tokaji. Most wines are not made from "rotten" grapes, and fermented grapes aren't simply gone bad.

Some of the wonders of the American west are fairly recent discoveries outside of ancient Indian tribes who would have ascribed it to one of their Gods.

You can read descriptions of some of the first European visits John Colter was the first white man to visit and document what is now Yellowstone in the early 1800s, and the Jayden survey of the 1870s was the first to map and bring back proof of some of the geological features.

I believe the first European to see the Grand Canyon in as a Spanish conquistador in the 1500s and there may be records of first impressions there. There are certainly diaries from the John Wesley Powell expedition of the 1870s.
