I saw Bush at the old Rendon Inn Hangar in New Orleans when Sixteen Stone first came out. I'm not sure if Everything Zen was even playing on the radio yet.
The Murmurs opened for them, and they were terrible
Bush was really good though.
Incubus used to play at The Varsity when I was at LSU before they hit it big.

Saw Incubus open for the Phunk Junkeez back in 1997.
I, and about twenty other people, saw System of a Down at Grant Street Dance Hall. They were the second act for Incubus. The guitarist was annoying; He kept drooling.

Saw both Aerosmith and Lynard Skynyrd as an non-headliner and/or opening acts at 2 different City Park Stadium* all day concerts in the mid 70's. It's blurry now but ZZ Top, Eric Clapton, J Geils Band where among others at those concerts..

Question for OP. Did you intend this as seeing a band headline before they got big? That’s how I interpreted it. Definitely easy to see bands before they get big when they’re opening for other bands.

Saw Hootie and the Blowfish at the Free Monday night concerts that the Varsity used to have around 1994. 2 months later they exploded, nut even then, you could tell Darius Rucker was the main man and had an it factor

Mostly metal bands. Saw Metallica and Raven on the 'Kill em All for One" tour at the Cameo in San Antonio in a room with maybe 100 people there.
Saw Alice and Chains on their first album open for Slayer...that was awesome.
Marilyn Manson few hundred people.
Stevie Ray Vaughn shows in ATX before he was a thing.
GnR at some small club.
Probably a bunch of others that most people wouldn't care about.

Saw Hootie & the Blowfish in a downtown Knoxville bar way before they went big. Don’t see her mentioned much, but I always thought Dido had an awesome voice. Saw her on a side stage before she went worldwide. While stationed in Philly, had a beer at the bar with Johnny Van Zant before his band Van Zant played a small sidewalk bar. Saw the Fixx, Candlebox, Drivin’ & Cryin’, Primus and Spin Doctors before their debut albums hit the airwaves.

I saw the Staples perform a tune up show in a bar a night they were due to play at the Arie Crown in Chicago. Had to be right around 1988.

Saw the Drive By Truckers with 5-10 other folks in attendance at Rudyard's in Houston on the Southern Rock Opera tour.
Saw lots of Texas country music guys when they were still playing college bars and house parties. I think most of them are back to playing college bars and house parties. Time is a flat circle.

This guy never got big or took off by I saw a guitarist/singer named Eric Heatherly playing an acoustic set in a Guitar Center in Illinois about 10 years ago.
For those that don't know who he is, he had a country hit back in the late 90s with a remake of Flowers on the Wall.
