There are a lot of great covers of Etta James' I'd Rather Go Blind, including a terrific version by Beth Hart and Joe Bonamassa. However I prefer Warren Haynes and Government Mule. Very soulful.

I personally like Lonestar's verson of Walking in Memphis better than the Marc Cohn original.

I don't think it's "better" but I like the higher level of energy and it is a bit faster. Less soulful though.
