Was he really unstoppable, b/c that ax going through his chest didn't look stoppable. He got caught by surprise by it, and like he said, had Thor gone for the head, he would have killed him.
But that wasn't why he destroyed the stones, as that has been explained by others here.

Thanos didn't wait 5 years...
I do not remember the exact time that went by but in the movie the Avengers meet and discuss how when thanos snapped there was an energy fingerprint created.... and that there was a second energy fingerprint created shortly after the initial one with the fingerprint originating from Titan. So they assumed that Thanos used the gauntlet a second time.... at that point they had no idea what he used it for they just know he used it.
The first snap left him weak and damaged from the amount of radiation/energy/power that flowed through him. He was much to weak to do it within few hours of the first snap so he had to wait and heal. I do not recall if the movie said it was a few days or a few weeks but it was a relatively short time frame between snap 1 and snap 2. I would assume it was closer to a few weeks to a month between Snap 1 and Snap 2 because Tony Stark was ridiculously emaciated.
At the time of Snap 2, Thor was still jacked and had short hair. After Thor kills Thanos we get a fast forward to 5 years later where Antman is brought back from the quantum realm by the rat and Thor is fat

No lie. They specifically say that it's been 3 weeks since the Snap when the remnant of the Avengers are at HQ, looking at the graphic of members they lost, etc.
That's the point where Carol brings Tony & Nebula back. I'd imagine it took a day or so of their theorizing about how to find him, and after that they were off to lop off Thanos' head.
Only then do you get the time jump card.

The real long term problem with Thanos' plan is would take a few generations and the populations would be back to the size they were before and now there are no Infinity Stones to fix it.
