Will Tony Clayton drill Sankey on what makes an athlete “Professional” ?

That a huge key here. What makes someone professional? Getting paid? Signing a contract? What will be the official definition of “professional athlete” going forward.

Right in line with, please define what a “woman” is.

Doubt Sankey shows up, he will let the lawyers do the talking for him

I think the SEC rule makes it pretty clear. They listed 3 criteria that a player can meet to be considered a professional player. One of which is simply entering the draft and not "appropriately withdrawing". The fact that the SEC, and media, are making such a huge issue out of this one year, one group of players, issue is insane.

If they allow Tony to examine him broadly, it could get interesting to put some of this on the record.

There was reports from the SEC that said he would be there.

I expect him to ask him to make a coherent argument over why Cole Hutson is allowed but these players are not.
Particularly in light of what the SEC submitted

Also, what makes the MLB draft different from any other professional draft?

If someone signs up to join a military branch but fails in basic training, and is discharged, does that make them a veteran with veteran benefits? Or if someone goes for a job interview, given a few days to demonstrate they can do the work but is not hired, can they claim to have been employed by that company?

Sankey will definitely be there but he may not have to testify.

Excellent point. Matt Mauck was drafted by and played in the Cubs organization before playing football at LSU.

Tony stated on Locked on LSU that he is basically chomping at the bit to have this situation.

Currently no but that doesn't mean that rule can't be changed in the future. It's really not a good comparison to this issue. There is a general rule for CFB that once you enter the draft you can't come back to college because you have voluntarily given up your amateur status to take the chance of making the NFL. You aren't necessarily a "professional" if you go through the draft and never sign a contract or make a roster but you voluntarily gave up your eligibility status for CFB. That's different this year because of the 5/5 ruling and really the SEC rule going forward as long as a player with eligibility appropriately withdraws from the draft prior to it occurring.
I'd prefer a rule, beginning next year, that clarifies that simply declaring for the draft means you can't come back not that you can declare and then withdraw and come back. I'd also prefer that even these 5/5 players not be allowed back but multiple judges have issued TROs around the country saying they can so it would be dumb of LSU, and any school, to not take advantage of that if a player can help your team win and they meet admission requirements to the school.

What time is this hearing?
Also, who are the beat reporters that will be attending?

I think 99% of people will be in agreement with this moving forward across the board. But this particular group of kids did not have any benefit to withdraw because they were told at the time that their eligibility was exhausted. Then a month later the NCAA completely flip-flopped on that.

I am probably speaking out of my arse here, but I believe you don't have to register for the MLB draft. They can draft you or I if they want to. You obviously don't have to sign (or even negotiate) if you don't want to, but there is no way to withdraw from the draft because you never officially opted-in to begin with. Again - I may be wrong on that, but that is how I understand it to operate on a basic understanding level.

Signing a contract?
Also re: Cole Hutson...
I wanna know what constitutes a contract in their eyes?
Do NFL minicamps just let anyone off the street try out?
No waivers are signed?
Aren't waivers a contract?

Why wouldn’t he be there? Something more important on the calendar? Too far away to travel? Not enough notice?
He will be there.
He will be there.

Mini-camp participants get per-diem, correct? For anyone on the NCAA or SEC level to pretend that doesn't matter... that's completely ignorant.
