Same as gazpacho, which is considerably nastier than vichyssoise.

Finger sandwiches and mini muffulettas
Boudin balls aren’t too bad in the heat, and eat almost as good cold as hot.

A game with hot conditions that time of year. Simple finger food. Maybe a few watermelons, snacks.
Absolutely nothing heavy. Jambalaya wouldn’t be bad. If you grill anything keep it simple burgers, hot dogs. Don’t over think it people won’t eat much on the heat.

Go with BBQ foods. Burgers, sausage, beans, potato salad. Throw in some chilled shrimp and deviled eggs. You can cook for 10-20 minutes and be done, or you can just pre-cook everything. Wrap the burgers and sausage in foil to keep them warm and you don't even have to cook in the middle of the day at all.

Several times we made a roast ahead of time and had poboys. Always ham and turkey etc for post-game sandwiches while we waited for the traffic to thin out.

Never had it for tailgate but love vichyssoise at home. Can be served chilled. It's light and can be made to be really Cajun with seasoning & hot sause. Add a couple big peeled boiled shrimp and a few pieces of diced andouille and you have a spicy delicacy. Very rich with butter and cream/whole milk and filling but cools you since you can served it chilled. Also doesn't take long to prepare. Could be done the day before and refrigerate and then assemble at tailgate. I know it's not traditionally South LA but it is French in origin.
