The Rose Bowl between Texas and USC immediately comes to mind, as well as the Bama vs Auburn kick 6 game, as others have mentioned. Both of those were instant classics that you knew would be classic games when you were watching it. I'd put the Rose Bowl game ahead since it was a NC game.
I'd also say the Fiesta Bowl in I believe 07 IIRC, between Boise State and Oklahoma. That was such a fun game to watch with some of the crazy plays Boise State was running. It made it even better that the underdog Boise State won.
Out of those 3, I'd probably have the Rose Bowl 1st, the Fiesta Bowl 2nd and then the kick 6.

2005 NC. Texas vs USC was an incredible football game.
This one stands out the most to me. Also the Boise St win over OU in the Fiesta Bowl when they pulled off the Statue of Liberty play.

My first thought was the 2007 Fiesta Bowl.

Game I attended: 2018 Clemson vs Texas A&M
Game I watched on couch: 2008 Texas Tech vs Texas or 2013 Iron Bowl

Div II playoffs. N Dakota State against S Dakota in a driving snowstorm and they played like it was sunny and 65 degrees. Best game I ever saw considering the weather..I believe it went to overtime.

2021 Ole Miss vs Arkansas was insane to watch
Watching great games as a neutral party is awesome, the amount of cardiological stress I go through during big LSU games is something to be studied

The sugar bowl where Alabama’s defense humbled Gino Toreta.

Arkansas vs Nebraska in the Orange bowl , where Lou Holtz punted on third down.

In person: 2000 BCS championship in the Superdome.
Florida State was a steam roller and Michael Vick nearly single-handedly won the game for Virginia Tech. Gutsiest performance from a QB I’d seen up to that point.

For me it was the 1973 Sugar Bowl
My dad took 9-year old me to that same game. It didn’t fully register at the time that the game would go on to be recognized as an all-time classic!

Both the 1981 NC game when UGA beat ND and the Super Bowl, Raiders victory. A friend’s father had connections at the Superdome. Also saw Duran and Sugar Ray Leonard.

That SEC championship game in like 2012 or 2013 between Bama and Georgia was an unbelievably good football game.

I disagree. This game was a dud based on all the hype. OSU was up 28-14 at halftime and for most of the game had a 2 score lead. OSU held serve on every MICH counterpunch and kept them at arms length all day. The score was never as close as it seemed and OSU was never in jeopardy of losing that game.

We were at a bar in uptown Dallas and I’ve never seen a true 50/50 split crowd at a bar that night.
It was insane in the 4th quarter and there were about 3 fights simultaneously when he caught that.
People forget a few plays earlier the Texas S Blake Gideon dropped a bread basket right between the numbers interception. He’s never lived that down.
Felt like a mosh pit. I miss those days
2 weeks after this game an undefeated Texas Tech went to Norman for a night game at OU. I went with a buddy on a freezing cold Oklahoma night. There was so much hype around the game and OU absolutely dominated them. OU DB's and linebackers were hit sticking Texas Tech receivers all night. A bloodbath that ended the TTU / Graham Harrell hype that year.

I unfortunately have not been to many non-LSU football games, but I did happen to attend LA Tech vs Nevada in 2008. Pretty random, but my dad had some girl he was seeing in Ruston at the time. Tech was up 31-14 in the 3rd quarter, but Nevada's QB started balling the frick out and came back to win 35-31. He threw for like 400 yards or something.
That QB would go on to be a pretty decent player - Colin Kaepernick. Had no clue who he was at the time.

On tv: Boise State vs Oklahoma in the Fiesta Bowl or Texas vs USC in the Rose Bowl.
In person, probably the Sunbelt Title Game between ULL and App State.
