Santa Cruz is close by and definitely worth a visit. There's also a kitchsy but fun spot near there called The Mystery Spot. If a fun "Americana" spot is your thing, its enjoyable.

When you venture south, definitely hit Carmel. I'm still not convinced its a real place. It beautiful. A must visit.

Skip Monterey. Sorry.

Stop in Big Sur for lunch, or just a stop. Its jaw dropping.

Before getting down to LA, Pismo Beach is a great stop, as is a little town just north of there, Avila Beach.Those are all near San Luis Opispo.

Finally, if you like cherries, you're in the land of cherries and the should be at every roadside farm stand you see. Grab yourself some.

I did a long vacation from down the California coast a few years ago. Despite their batshit crazy politicians, the central coast of California is proof God exists.

This doesn't help you, but I had a 2016 V6 5.7 and I traded it in in 2023 for a Tahoe. Dumbest fricking thing I've ever done. Still pissed at myself for doing that. That Tundra was a tank that drove like a luxury car. Good luck, my friend.
