I was just coming to make sure this one got mentioned. Adrian Peterson at OU, and Boise with the upset pulling off a Hook & ladder + Statue of Liberty trick play at the end to pull off the upset was pretty awesome.
I'll also thrown in the WVU vs. Pitt. game in '07 to cap off so many late season upsets to catapult LSU back into the title game.

2007 WVU vs Pitt...not necessarily because of the game itself, but everything that it led to and the scope of the impact it had.

I was also at that December 31, 1973 Sugar Bowl and have often referred to it as the most compelling and consequential game I have ever been to where one of my teams (LSU or the Saints) was not playing.
And I have been to six Super Bowls and have seen numerous national championships won in the Sugar Bowl and in Final Fours.

I worked at AT&T and was invited to the one suite they have at the Cotton Bowl for the red River
It was the year that Texas was crushing Oklahoma and then Kyler Murray flipped a switch in the third quarter and came back to tie it and then Texas won in overtime. What an amazing atmosphere the fair is. In the third quarter the Oklahoma side was 20% full and it was back to 100 when they came back
I always heard people talk about red River, but I always thought there is no way it can be that good and it exceeded every expectation. Such a unique environment.

Ohio State at Michigan, November 20, 1971. UM up 10-7 with about 90 seconds left in the game, OSU driving to try to win or at least tie. Michigan DB makes acrobatic interception, diving over the shoulder of the OSU receiver, essentially ending the game. No PI call. Close--might have gone either way, but no replay challenge back then.Woody completely loses it, storming onto the field, cursing at the officials, then back to the sideline to break the down marker pole over his knee and destroy the chain. Bo chuckling on the Michigan sideline. Most epic meltdown ever.

SECCG first time in ATL in 1994. Florida beat Bama 24-23. I have ordered SECCG tickets every year it has been in ATL, since 1994. I sell them when LSU is not playing.

If it has to be College that is a much harder one. Probably '21 SEC Championship game Bama vs Georgia. Seems like most the games I went to that were college football games not involving LSU always ended in blowouts.
The red River shootout that I went to back in '03 was awesome but it wasn't a close game. But was one of the best non-LSU experiences I've had. Wish it was a better game, I'm pretty sure it was like 63-3 or something like that. it felt like Texas never scored. One of my best memories of Non-LSU games.

I read the OP to mean a game that you attended, so that’s what my answer is.
10th ranked Florida vs #1 undefeated Florida State in Gainesville, 1997. Attended with my Gator fan wife and her family.
Fred Taylor ran wild, and Spurrier threw a massive curveball by rotating quarterbacks on a play-to-play basis for much of the game.
It was an absolute classic that Florida won. If I remember correctly, not many people gave them a chance of winning. I had to tip my hat to the Florida crowd that night. That stadium was balls out rocking. Best environment I’ve experienced outside of Baton Rouge.

1966. Michigan St was a significant underdog even though they were 9-0 going into the game. But they had the HFA. Notre Dame was widely accused of chickenging out at the end by playing for the 10-10 tie.
Well, Notre Dame demonstrated their utter superiority the next week by annihilating Rose Bowl-bound USC 51-0 in the Colosseum.
